Papaya Blossom atau bunga pepaya adalah salah satu sayuran yang kurang begitu disukai oleh orang kebanyakan. Alasan klasik penyebab orang tidak menyukai sayur pepaya karena rasanya yang pahit. Oleh karena itu dibutuhkan cara pengolahan yang tepat agar rasa pahitnya berkurang. Tips mengolah sayur daun pepaya dan bunga pepaya agar tidak terlalu pahit adalah dengan merebusnya terlebih dahulu dalam larutan garam dan sedikit kapur sirih lalu dicuci bersih sebelum ditumis. Tumis pepaya adalah salah satu hidangan khas minahasa Sulawesi Utara.
Ingredient:
1 pack young papaya leaf, boiled with salt and lime stone/kapur sirih, washed with ice water, set aside
1 pack papaya blossom, prepare it as the papaya leaf do
3 cloves garlic, finely chopped
2 cloves shalot
3 bird eye chillies, finely chopped
30 gr dried salted anchovies/ teri medan, deep fried, drained
salt to taste
1 tbsp oil
Instruction:
- heat up oil in a wok pan, saute garlic and shallot until slightly browned
- add bird eye chilli dand papaya blossonand papaya leaf, saute another 2 minutes
- add fried salted fish and 1/2 cup of water, bring to boil and season with salt evenly
- serve immediately
