Roasted Garlic Pasta Spaghetti with Pan Seared Baby Scallop

Roasted Garlic Pasta Spaghetti with Pan Seared Scallops recipe is one of my favourite meals al the time. The roasted garlic tomato for pasta is actually tomato based sauce with tons of roasted garlic. Instead of fresh tomato that usually used on roasted garlic sauce, i’m using my leftover roasted garlic from making Pan Seared Grouper Fillet with Roasted Tomato Sauce Recipe. Then you know what, i guess this must be the reason why my niece can’t stop diggin into the rosted garlic spaghetti.

Spaghetti with Roasted Garlic Sauce and Pan Seared Baby Scallop

Don’t get me wrong, roasted garlic got much more milder garlicky flavour than sauteed or deep fried garlic. Perfectly roasted garic got  caramelized sweet and also savoury hint, you can even barely eat it like roasted potato. Pan seared scallops with perfectly charred outside and bounchy, juicy and also crunchy meat inside will tickle your taste buds. Make sure you’ve got a “dry scallop”instean the ” wet scallop”. Scallops which threated with sodium tripolyphosphate (STPP)  called “wet scallop” while the “dry scallops” didn’t.  STPP causes the scallops to absorb moisture prior to the freezing process, thereby getting a better price per unit of weight. It’s easy to diffrenciated dry and wet scallop, “dry scallop” is usually got whitish creamy translucent color, while the “wet scallop” is usually got whitish opaque  color.

Slurpping Delicious  Roasted Garlic Sauce Spaghetti Perfectly Seared Baby Scallop!!

I had my first roasted garlic pasta at Mad for Garlic restaurant in Grand Indonesia  Mall, Jakarta. Mad for Garlic was a garlic themed restaurant from Korea. As i expected before, vibrant of garlicky dishes was oferred with hillarious name on it. Beside the roasted garlic pasta, 1 had vampire (or dracula) killer which is a toasted bread with garlicky dip, caprese salad (standart) and also rib eye steak with various kind of garlic. Thougt  i’m  really enjoying the roasted garlic pasta, i guess i’m not gonna spend more than 10 bucks for that simple roasted garlic pasta in Mad for Garlic restaurant no more, i got a fully bowl if it’s homemade.

Roasted Garlic Pasta Spaghetti with Pan Seared Baby Scallop

Making oven roasted garlic recipe is so easy to do. Simply cut the tips end of the garlic bulp to made it a lot easier to extract after roasted, toss the garlic with olive oil and season it with salt and black pepper evenly, then lay them with the bottom side down in the oven tray. Use a big enough baking tray, so the garlic are not too crowded. You want room between them for the moisture to escape, which concentrates the garlic flavor. Bake for 30-45 minutes (depending of the garlic bulb size) in 482ºF (250ºC), or until the garlic are completely softened and wilted, and start to wrinkle and some of the them charred. The garlic bulb may take longer to roast, depending on the size and the ammount of your garlic. The oven roasted garlic will keep for about three days in the refrigerator and about 6 days if you packed it with oil, i also can be frozen for up to six months.

Roasted Garlic Pasta Spaghetti with Pan Seared Baby Scallop Recipe

Roasted Garlic Pasta Spaghetti Recipe:

  • 125 gr pasta (i’m using angel hair spaghetti), cook with package instruction
  • 3-4 bulbs of roasted garlic
  • 1/2 cup roasted tomato from 1 1/2 cup fresh cherry tomato (you can replace with HOMEMADE SUN DRIED TOMATOES)
  • 1 tbsp paprika powder  (you can replace with HOMEMADE ROASTED BELL PEPPER)
  • 1/4 cup  grated parmesan cheese
  • a pinch of oregano
  • a pinch of thyme
  • Salt and freshly ground black pepper to taste
  • 2 tbsp olive oil

Instruction:

How to Make Roasted Garlic Pasta Sauce Spaghetti :

  • Put the roasted  tomato, roasted garlic  and cheese in food processor and process until form a smooth paste
  • Heat up the olive oil in a sauce pan, saute the roasted garlic sauce paste until fragrance
  • Add the liquid from cooking the pasta, season with salt, pepper, thyme, and oregano, bring to boil
  • Simmer and reduce the sauce until thicken
  • Served it with pan seared baby scallops and romaine lettuce greens

Pan Seared Scallops Over Roasted Garlic Sauce Spaghetti

 

Pan Seared Baby Scallop Recipe :

  • 200 gr baby scallops (1 small package)
  • salt and pepper to taste
  • 2 tbsp olive oil

How to Perfectly Pan Seared Scallops”

  • Drain the scallops from the remaining dripping (use kitchen towel or shiever)

  • Season the scallops with salt and pepper evenly
  • Heat up the skillet  and swirl the olive oil to coating it well, wait until the skillet is smoking hot
  • Put the scallop, do not overfilled it or you’re scallops would be steamed rather than seared

  • Once the bottom turn intu crusted golden brown, flip and wait until the other side got charred too (mine was about 1 minutes each side)

Malaysian Asam Laksa Recipe: Spicy Noodle Soup with Grouper Fish Head

Asam laksa  from Malaysia is a sour, fish-based noodle soup. While Indonesian Beef Rendang is the World’s  most delicious foods complied by CNN Go in 2011, Malaysian  asam laksa is listed number 7  from 50 dish. Tamarind or asam (or asam jawa) which is commonly used to give the stock its sour flavor. Besides,  asam keping (also known as asam gelugur), dried slices of sour mangosteen, for added sourness. The modern Malay spelling is asam, though the spelling assam is still frequently used. This asam laksa tamarin-based broth soup  is similiar with Indonesia Pindang Tulang  from Palembang and Chinese  Hot and Sour Beef Soup  .

Laksa is a spicy rice noodle soup from the Peranakan culinary, fusion of of Chinese and Malay (Melayu) descent found in Indonesia, Malaysia and also Singapore. Laksa derived from the Sanskrit lakshas (लकशस्) meaning “one hundred thousand” (lakh) and Hokkien Chinese word 辣沙 (Cantonese: [lɐ̀t.sáː]) as “dirty”  and “spicy sand” from the appearance and  the texture of the grounded dried prawns.

The main ingredients for asam laksa include shredded fish, usually ikan kembung or mackerel fish,but you can use any kind and also any part of the fish that you like. I’m using a giant grouper fish head, i’m using half of it for making  Woku Belanga Kepala Ikan Kerapu khas ManadoThe laksa asam topping and condiment is quite many, diced cucumber, finely sliced red onion, chopped red bird eye chillies, diced pineapple, lettuce, mint leaves, Vietnamese mint or daun laksa/daun kesum and pink torch gingerblossom(bunga kantan/kecombrang/honje). Authentic version always use daun laksa, either it won’t be laksa for my licking. Asam laksa is normally served with either thick rice noodles or thin rice noodles (vermicelli), but i’m using a low calories egg noodle for this recipe.

Resepi  Laksa Asam Pedas Kepala Ikan (Grouper Fish Head Asam Laksa Recipe)

There are two basic types of laksa: curry laksa and asam laksa. Curry laksa is a coconut curry soup with noodles, while asam laksa is a sour fish soup with noodles. Beside fish laksa curry, i love Laksa Ketam or Rice Noodle in Rich & Spicy Crab Curry Soup. Thick rice noodles also known as laksa noodles are most commonly used, although thin rice vermicelli (bee hoon or mee hoon) are also common and some variants use other types.

This kind of spicy, hot and also sour with a little touch of natural savoury and sweetness from the broth basic ingredients is a common preparation in Asia. I love everything if it’s got that trio flavour within one dish. Since everybody need and love carbs either it pasta or even noodle, i guess you should mix-match the ingredients. Instead of tamarind paste, you could replace it with vinegar or even lemon juice. You can experiment with the broth basic-flavour with chicken, beef, squid, shrimp or crab, what ever you like then. Beside using noodle, i love asam laksa served with japanese udon too.

Asam Laksa Fish Head Recipe :

Ingredients:

  • 1 Garoupa/grouper  fish head (you can substitude with red snapper or any large fish head), cut into pieces
  • 1 pack rice noodle (i’m using low calories noodle), about 250 gr for 4 serving
  • 1 kaffir lime, juiced
  • 3 L water
  • 4 tbsp tamarind paste
  • 2 tbsp oil
  • salt and pepper to taste

Asam Laksa Spice Paste:

  • 12 shallots(bawang merah)
  • 6 cloves garlic(bawang putih)
  • 12 red chilli/ cayenne pepper(cabe merah)
  • 6 or more bird eye chili (cabe rawit)
  • 3 candlenuts (kemiri/buah keras)
  • 5 cm galagal (lengkuas)
  • 5 cm ginger (jahe)
  • 5 cm fresh turmeric (kunyit)
  • 4 stalks lemongrass, use only the soft white inner part (sereh/serai)
  • 1 tbsp shrimp paste (terasi/belacan)
  • 2 tbsp dried shrimp, soaked with warm water, toasted

Garnish:

  • Vietnamese mint leaves (daun laksa/daun kesum), roughly chopped
  • Mint leaves, roughly chopped
  • Red chilli pepper, finely chopped
  • 10 cherry tomato, halved
  • Torch ginger blossom (bunga kantan/ kecombrang/honje), thinly sliced

  • 1/2 red onion, thinly sliced
  • Calamansi lime, halved

Instruction:

  • Season the fish head with lime juice, salt and pepper, set aside

  • Heat up the oil in a sauce pan, saute the spice paste and the shrimp paste until throughtl cooked and fragrance
  • Pour the water and throw the tamarind paste, bring to boil

  • Add the fish head and bring it to boil again

  • Once it boil, discard any scum and foam that risen up above the broth
  • When the foam is not present, simmer the broth until the fish is completely cooked and the collagen is released for about 30- 45 minutes
  • Season the broth and adjust the taste
  • For serving, put the noodle in the bottom of the bowl, put the fish head above it and pour the broth.
  • Serve it with the garnish and condiments

Black Chanterelle Mushrooms Pasta with Sun Dried Tomato and Cream

Black Chanterelle mushrooms pasta recipe with  addition of sun dried tomato and cream is an easy, healty and yet tasty dish. Black Chanterelle mushrooms made it fancy even more.  Black Chanterelle mushrooms (Craterellus cornucopioides) is an edible mushroom, the horn of plenty, also known as black trumpet, trompette de la mort or trumpet of the dead. The idea of the name “trumpet of the dead” is that the growing mushrooms are being played as trumpets by people under the ground.

The dried black chanterelel mushroom’s flavour even improves than the fresh, but the texture is slightly tougher and more rubberry. That’s why i suggested that dried chanterelles reconstituted or soaked in water overnight to soften it. To retain more flavor, you should not discarded the soaking water and using it to the dish when they are cooked. Chanterelles mushroomare especially prized for their culinary value and are favorites of mushroom hunters.

Black Chanterelle Mushrooms Pasta Recipe

This mushrooms is found in woods in North America, Europe, Japan and Korea. Mainly it grows under beech, oak or other broad-leaved trees, especially in moss in moist spots on heavy calcareous soil. The mushroom is usually almost black.  Hunters of this mushroom say it is like looking for black holes in the ground. The Horn of Plenty looks rather unattractive, but has a very good flavour. Humans have eaten mushrooms for thousands of years. Chanterelles like this one are especially prized for their culinary value and are favorites of mushroom hunters. Mushroom hunting is an exciting, fun, and rewarding hobby.

I purchased  a couple pack of  Borde Trompetttes des Maures or dried black chanterelle mushrooms in Carrefour supermarket for about 5 USD for tiny 28 gr package. Pretty pricey, but i guess it’s worht for the price, besides, it’s not easy to find a gourmet mushrooms in Indonesia, even in Jakarta. I guess this black chanterelle is away cheaper than porcini mushrooms that i’m use fo making Smoked Lamb Chop with PORCINI Mushrooms Crusted, Saffron Polenta and Chicken Ballotine Recipe with Spinach, Minced Chicken and Porcini Mushrooms Powder Stuffing.

Spaghetty Pasta with Dried Chanterelle Mushrooms, Sun Dried Tomato and Cream

Black Chanterelle Mushrooms Pasta with Sun Dried Tomato and Cream Recipe :

Ingredients:

  • 1 package of dried Black Trumpet mushrooms (28 gr)
  • 125 gr dried pasta ( i use angel hair pasta), cook according to package instruction
  • 1/4 cup Homemade Sun Dried Cherry Tomato , soaked 10 minutes, drain, roughly chopped (you can replace with 1/2 cup fresh cherry tomato)
  • 1/2 cup  heavy cream
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 2 shallots, finely chopped
  • 4 cloves garlic, finely chopped
  • salt and pepper to taste
  • a pinch of mix italian herbs

Instruction:

  • Wash the dried black chanterelle mushrooms to remove any dirt in running water
  • Soaked it overnight in the fridge
  • Drain, shredded of roughly chopped it, reserve the liquid
  • Heat up the butter and olive oil, saute the shallot and garlic until slightly brown
  • Add the chanterelle mushrooms and sundried tomato, saute another 3 minutes
  • Pour the soaking liquid and heavy cream, bring to boil, simmer until thicken
  • Add the salt and pepper with mix italian herbs
  • Add the pasta and cook it until it mixed well
  • Serve it immediately

Live Blue Crab Made the Laksa Had a Very Kick’in and Superior Crabby Broth

I was  so lucky to found live blue crab at Grand Lucky Supermarket in Jakarta (nearby Pacific Place Mall) and it’s not tagged as silly expensive as a seafood restauran. The live blue crab cost me about 9.99 USD for a kilo and i brought home about one and a half kilos. No more pale canned crab meat that cost me about 2.85 USD for 125 gr drained crab meat weight. Foraging over a gourmet store in Jakarta driven me to Kem Chick Supermarket and i found a very small bundle of daun laksa or daun kesum or laksa leaves for about 0.5 USD. Daun laksa had a stong aromatic aromas and pleasant spicy and a little bit tangy after taste. but since i using live blue crab for this recipe, i use only a pinch. I think daun laksa is more suits with asam or sour laksa instead of curry laksa for my personal licking.

Spicy Crab Coconut Curry Soup with Rice Noodle/Vermicelly a.k.a Laksa Kari Ketam

Thick rice noodles also known as laksa noodles are most commonly used, although thin rice vermicelli (bee hoon or mee hoon) are also common and some variants use other types.

Crab Curry Laksa Recipe:

  • 1 kg live or fresh blue crab,
  • 2 pcs tamarind peel (asam keping/asam potong)
  • 1/4 tsp tamarind paste
  • 5 fresh shiitake mushrooms, thinly slice*optional
  • 1500 ml chicken stock
  • 1 cup coconut milk
  • Cooking oil
  • Rice vermicelly or rice noodle, boiled according to package instruction
  • Salt, sugar and fish sauce to taste

Laksa Spice Paste Recipe:

  • 20 fresh red chillies (cabe merah)
  • 12 shallots (bawang merah)
  • 8 cloves garlic (bawang putih)
  • 3 cm turmeric (kunyit)
  • 3 cm ginger (jahe)
  • 1 tbsp shrimp paste (terasi/belacan)
  • 3 candlenuts (kemiri)
  • 2 lemongrass (sereh)
  • 1 tsp coriander (ketumbar)
  • 1/4 tsp pepper
  • 30gr dried prawns, soak for 10 mins, drained

Garnish and Condiment:

  • Corriander leaves
  • Daun kesum or laksa leaves or vietnamese corriander leaves
  • Bean sprout
  • Chopped tomatoes
  • Chopped chillies
  • Deep fried shallots
  • lemon wedges

Instruction:

  • Clean the blue crab and remove the gills,steamed for about 15 minutes, carefully remove the meat from the shell, drain and set asida the crab meat, retain the liquid for the laksa broth
  • Heat up the oil in a wokpan, saute the spice paste until fragrant and had more vivid color
  • Pour the chicken stock, coconut milk and the liquid from steaming the blue crab
  • Add the tamarind peel and the tamarind paste, bring to boil
  • Put the shiitake mushrooms and season to your preference taste

How to serve the crab curry laksa:

Homemade Sweet Potato Gnocchi Pasta Recipe. Gnocchi ia a thick and soft  Italian  pasta that consist of semolina flour, potato and egg yolk. Instead of potato, you can substitude with , pumpkin, or any rooted veggies like sweet potato, carrrot or beet roots etc. You can made it with various sauce, you can served it with tomato base sauce like sun dried tomato pesto, spicy tuna and tomato sauce or spicy chilli tomato sauce; or peanut pesto sauce. Gnocchi is usually served as appetizer, thats why i like to served purple sweet potato gnocchi as  a simple and refreshing salad with a springkled sumac and a lil drizzled of truffle oil.

HOMEMADE GNOCCHI RECIPE SWEET POTATO GNOCCHI SALAD

Today i made a homemade purple sweet  potato from scrath.  The purple sweet potato tagged as japanese purple sweet potato, googling search end up as Okinawan purple potato. This sweet potato is really sweet in taste and had a dark purple color. I’ve try many times made a mashed purple sweet potato fo my Confit d’Oie /Goose Confit Recipe Serve with Cherry Tomato & Musrooms Confit, and Chicken Ballotine Recipe with Spinach, Minced Chicken and Porcini Mushrooms Powder Stuffing.  The Okinawan purple potato made a very impressive purple coloring for many dish like pasta, cake or even bread.

Forget the store brought gnocchi since homemade gnocchi is preety easy to made and it taste far away greater than the the instant gnocchi. In rush hours meals, i like to made the gnocchi  into a tiny long tubular and simply cut it 1 1/2 inchs and directly boiled it. But when my niece is in town, she always did the fork  pressing to make a fork punch pattern in the gnocchi.

Ingredient:

  • 250 gr purple potato, peeled
  • 100 gr semolina or all purpose flour plus more for dusting
  • 1 tbsp cheese powder
  • 1 tbsp olive oil
  • salt and pepper to taste

Gnocchi Pasta Salad Recipe :

  • 1 aubergine or eggplant, cui tinto bite sice and roasted until cooked and had a  nice charred golden brown surface
  • 1 cup amaranth( we used to called this as spinach in Indonesia)
  • 2 hard boiled egg, quartered
  • 1/2 cup kalamata / black olives, halved
  • grated cheese
  • a pinch of SUMAC
  • black truffle oil
  • salt and pepper to taste

Instruction:

  • To make the pasta, cut the sweet potatoes an wrap with alumunium foil and bake until fork tender for about 20 minutes.
  • Remove the potatoes and let it cool, place into a bowl and mashed  the flesh through a fine sieve metal strainer.

  • Add the cheese, salt , pepper and all purpose flour and olive oil and mix until dough forms.

  • Place the dough on a lightly floured surface and knead until smooth and elastic, about 6 minutes.
  • Add additional flour if the dough is still sticky. Then, quartered
  • Roll each section with a floured rolling pin into a long tube like roll.

  • Cut each section into 1 inch bite-size sections.

  • Bring a large pot of salted water to a boil and cook until the gnocchi starts to float.
  • Remove the gnocchi from the cooking water and drained

Sumac, sumak or sumach  is  flowering plants in the genus Rhus  from family Anacardiaceae. Sumac grow in subtropical climates, especially in Africa. The sumac fruits (drupes) are grounded into a reddish purple powder used as a spice in Middle Eastern cuisine to add a lemony taste to salads or meat. In Arabian cuisine, it is used as a garnish for  hummus and added to rice or kebab.

I’ve been searching sumac all over around and end up with nothing but dissapointing. My Arab descent friend  did’t known about it, even few of  arabian ethic stores in Palembang didn’t notes that. Thanks God one of my fellow blogger friends, Tinsyam  had sumac. She sent me a couple tablespoons of sumac and i can even wait to give it a try for my salad. My first verdict of sumac is lemony and tangy  sour aftertaste, i guess sumac is not only suits for salad but also great with seafood. My next project is making sumac crusted tuna.

Today i make a sumac salad with a fusion of eastern and western ingredient. I use HOMEMADE DUCK PROSCIUTTO, back olives, cheese and truffle oil for western touch. To give a contrast, i used few asian ingredient like lotus root and CRISPY ENOKI MUSHROOM TEMPURA and blended it with Middle East spice Sumac. For a presentation purpose, i mix the sumac sala dressing  after i did the photo session, but i still drizzled  it with black truffle oil.

Ingredients:

Pasta, Spinach and Duck Prosciutto Recipe:

  • 1 cup cooked pasta(fusili)
  • 1 cup red spinach/amaranth leaves
  • homemade duck prosciutto
  • tomato, thinly sliced
  • bell pepper, thinly sliced
  • crispy enoki mushrooms tempura
  • carrot
  • raw peruvian sweet potato
  • black olives (kalamata)
  • garlic peanut
  • shaved cheese
  • lotus root, peeled and thinly sliced

Sumac Salad Dressing Recipe:

  • 1/2 tsp sumac
  • black truffle olive oli
  • 1/2 tsp lemon juice
  • a pinch od salt and pepper to taste

  • Mix all sumac salad dressing ingredient, set aside
  • Toss all ingregient and adjust the taste

Sun dried tomato pesto is one of the most populr pesto sauce. Sun dried tomato pesto commonly contain dehydrated sun dried tomato, pine nuts, cheese and garlic. Well pesto is basically using greens or veggies that blended with nuts and cheese. The greens or veggies that possibly for pesto is basil, parsley, broccoli, spinach, tomato, beet root, etc, and it blended with many kind of nuts and cheese, you name it for your licking preference. I’ve ever made a pesto with Lemon Basil, Peanuts and Parmaggiano-Reggiano Cheese Pesto before, today i’m making a sun dried tomato pessto with some roasted bell pepper. For the protein, i use my Homemade Duck Prosciutto

Sun dried tomato and roasted bel pepper pesto had a tangy and smoky flavour with a polite hint of hotness. Some people like to charred the roasted pepper and peel the skin, but i didn’t. The bell pepper skin is valuable for lots of dietary fibres and vitamins.You won’t even know it since it proccessed into fine paste along with the sun dried tomato pesto ingredient. Some of you would questioning where is the duck prosciutto. Well i browned it firs since my grandmas won’t eat any uncooked food, even it cured meat. The duck prosciutto is got strighten when it heated and don’t worry it won’t change the taste.

Ingredient:

  • 125 gr pasta, cook with package instruction
  • 50 gr HOMEMADE DUCK PROSCIUTTO
  • 2 cloves garlic, finely chopped
  • 2 tbsp olive oil

Sun Dried Tomato and Roasted Pepper Sauce Recipe:

  • 50 gr HOMEMADE SUN DRIED TOMATOES, soaked  with boiling water for 10 minutes, drained, reserve the liqid
  • 1 large size red bell pepper, seeded, quartered
  • 3 tbsp roasted cashew
  • 3 cloves garlic
  • 2 tbsp  grated parmesan cheese
  • a pinch of oregano
  • Salt and freshly ground black pepper to taste
  • 1 tbsp olive oil

Instruction:

How to Make Sun Dried Tomato and Roasted Pepper Sauce:

  • Put the sun dried tomato, roasted bell pepper, cashew, garlic and cheese in food processor and process until form a smooth paste
  • Heat up the olive oil in a sauce pan, saute the paste until fragrance
  • Add the liquid from soaking sun dried tomato, season with salt, pepper and oregano, bring to boil
  • Simmer and reduce the sauce until thicken

How to Make Sun Dried Tomato & Duck Prosciutto Spaghetti :

  • Heat up the olive oil, saute the duck prosciutto until slightly browned

  • Add the garlic and saute until slightly browned
  • Put the sun dried tomato and roasted pepper paste into the pan and toss it well(add the soaking liquid if needed)
  • Serve with the spinach salad

Smoked salmon stuffed homemade ravioli

I love ravioli very much, ravioli is similiar to chinese wonton or Italian filled pasta. They are composed of a filling sealed between two layers of thin egg pasta dough and are served either in broth or with a sauce. Today i make my basil green ravioli with roasted pumpkin filling. The contrast color between the dough and the filling is the trick for a beautifull ravioli dish. Typical ravioli filling is meat, veggies and cheese. Since i had my leftover Tea Smoked Salmon since i made two of it and only finished one. The other tra smoked salmon  i keep refrigerated without any cover. It’s tuned into dried, hard and not very pleasant to chew after reheated. Since i’ve never wasted any food before it ruined, i guess this smoked salmon is gonna be a pasta filling or pasta seasoning.

I had once truffle mushroom in Japanese restaurant, yes, you’re not miss reading. It’s a very think shaved truffle oil over poached cod or gindara. Since i can access any truffle around here, i just can get black truffle infused olive oil. This Pietro Coricelli Extra Virgin Olive Oil Infused With Black Truffle is send from this online groceries store named Rumah Segar. This truffle oil had more intense flavour and aromas of black truffle compared the actual truffle  mushrooms. Have no clue weather they get the infused flavour is atually comes from syntetic or the real things, but i just loving it!

Today i’ve made a ravioli with hot smoked salmon filling. Simply seasoned with seasalt and chopped pickled green peppercorn make a refreshing and contrast savoury flavour. I add some salted quail egg from making Lo Mak Gai Dim Sum, it make te pasta even better. I’m inspired by a pasta starter dish that i had recently, a prawn tortellini without any sauce, just drizzled with homemade basil oil  and served with fenugreek sprout salad. Sometimes simple ravioli recipe is what we need to refresh the taste buds.

Fresh Ravioli Pasta Recipe:

  • 2/3  cups (1oo g) all-purpose flour
  • 1/4 tsp. salt
  • 1 egg yolk
  • 1 tsp. olive oil
  • 1 tbsp  water
  • Extra flour on hand for dusting

Smoked Salmon Ravioli Filling recipe:

  • 150 gr homemade smoked salmon, sheddered, finely chopped
  • 1/2 tsp pickled green peppercorn
  • 1 tbsp heavy cooking cream
  • 1 tbsp parmaggiano-reggiano cheese
  • salted quail egg yolk *optional
  • seasalt  to taste

Garnish:

  • Green baby spinach leaves
  • Red baby spinach leaves
  • Lemon basil leaves
  • Sweet potato leaves
  • Diced cherry tomato
  • Diced onion
  • Tiny turkey sausage
  • Black truflle oil (i use Pietro coricelli)

Instruction :

How To Make the ravioli filling.

  • Mix all ingredients thoroughly until you have a smooth, paste-like consistency.

Make the ravioli pasta

  • Mix all the ingredients in large mixing bowl
  • Shape it into a ball, and place it on your work surface. Knead for at least 10 minutes or until it becomes elastic.
  • Roll the dough with rolling pin to flatten it, you can use pasta maker instead
  • Take the smoked salmon ravioli filling and place a tablespoon of it in middle of a dough then put the salted quail egg yolk.

  • Fold the dough in half over the filling, making a half-moon shape. Be sure all the filling stays inside. Pinch the edges together and then seal the edges of the ravioli with your finger punch. Make sure to press firmly and go all the way around. This will add a “homemade” touch as well.
  • Press  the edge with a round pasta cutter to make a direction for the swirl pasta cutter
  • Cut the edge with swirl pasta cutter.

  • Dust the finished ravioli with flour to keep them from sticking together.
  • Boil the ravioli pasta until your preference doneness, drain out and drizzle a little bit of olive oil
  • Voila, now your Homemade Ravioli is ready to go with your favourite sauce

I really love frog legs for it’s succulent and “sweet” flesh flavours. It’s almost like a tiny little free range chicken or malay/kampong chicken. Asian descent, especially east asian such China, Korea and Japan is the most frog consummers country. Frog leg called swikee or “water’s chicken” in Indonesia. Swikee soup is stewed frog in hot, sour and spicy frog leg with fermented soy bean taucho that populer in Purwodadi, Central Java. You can find the  recipe here. Sesame Crushed Frog Leg with Creamy Spinach Puree and Canelloni

I just know that French had it’s own frog leg dish too.They had a freched stly frog (Note : just known about the french lamb rack recently). This simply treatment of frog leg make a fancy and cute looking frog leg. you shoud make a circle cut to the lower end of the femur or leg bone and pulled the meat to the other end, forgive my instruction then watch the video of making frenched frog leg here.

I served the Sesame crusted frenched frog leg with Spinach and Feta Cheese Stuffing Canelloni, creamy spinach puree and a little of chili oil. Playing and combining lot’s of texture and flavour is the secret of french cuisine. The sesame crustes is perfectly crispy and the frog leg meat is still juicy and succlulent, nothing possibly better than that. Instead of roasting the the frog leg, you can even deep fried, just make sure that you use enough amount of oil to completely submerged entire frog leg.

Sesame Crushed Frog Leg with Creamy Spinach Puree and Canelloni

INGREDIENT :

Sesame Crusted Frog Leg Recipe :

Frenched frog leg how to frenched frog leg

Frenched frog leg: cute little froggie!

  • 6  frog leg, frenched, instruction here
  • 1/2 tsp freshly grounded black peppercorn
  • 1/4 tsp mixed italian herbs( thyme, rosemarry, oregano etc)
  • 1 tsp olive oil (for spraying)
  • 1 tbsp white wine vinegar
  • 1/3 cup regular sesame seed, toasted
  • 5 tbsp black sesame seed
  • 2 tbsp butter
  • 2 egg yolk
  • salt and pepper to taste
  • 1 tbsp spiced flour

INSTRUCTION:

How to Make Sesame Crusted Frog Leg:

  • Preheat oven to 200 degree Celcius.
  • Pat dry the frenched frog leg, season mixed italian herbs, black peppercorn and drizzle with vinegar, set aside
  • Meanwhile, mix the regular and black sesame in another bowl, set aside
  • In another bowl, make a batter by mix egg yolk, spiced flour, salt and pepper, set aside
  • Pat dry the frenched frog leg, dip a the frog leg into the batter then dip intothe sesame mixture
  • Arrange the frog leg in a oven rack, spray all over with olive oil
  • Put into oven and roast the frog leg about 5-7 minutes (you can even deep fried)
  • Voila your crispy sesame crusted frog leg is ready!
  • Serve with Spinach and Feta Cheese Stuffed Canelloni ,*Creamy Spinach Puree, **Chili Oil,
    and Balsamic Reduction Sauce

*Creamy Spinach Puree Recipe:

  • 1 cup fresh spinach leaves
  • 3 tbsp heavy cream
  • 3 roasted garlic, mashed
  • salt and pepper to taste
  • 3 tbsp chicken broth

How to Make Spinach Puree:

  • Put the spinach into heatproof glass bowl, steam for about 3 minutes until soften
  • Put all ingredient in a blender, proces until smooth and add more broth for your preference consistency

** Chili Oil recipe:

  • Add 1 tbsp chili powder /or 2/3 tbsp fresh chopped chili to 1/3 cup olive oil, add a pinch of salt
  • Heat the oil until warm and slightly boiled, turn of the heat and chilled
  • Strain the oil with fine sieve cheese cloth and serve immediately

Garnish : buabok/ peugaga leaves, chili blossom, woodear mushrooms and lemon basil leaves.

Spinach and Feta Cheese Canelloni Pasta ala Dentist Chef

Cannelloni is actually tube or long cillinder shaped italian pasta.The cannelloni is usually stuffedwith meat or/and vegies (usually spinach), cheese, mushroom etc. Canelloni served as baked pasta with melted cheese and tomato sauce. The most common cannelloni is made of rolled lasagne pasta sheet, but lucky me, i found the ready made canelloni pasta in the supermarket the day before.

INGREDIENTS:

Spinach and Feta Cheese Canelloni Recipe :

  • 6 canelloni pasta or 6 lasagna sheets
  • 100 g of feta cheese,soaked in milk, drained then crumbled
  • 1  onion, finely chopped, devided into 2 parts (one part for the spinach filling and the other for the spicy sauce)
  • 2 cloves of garlic, finely chopped
  • 300 gr fresh spinach leaves
  • 4  tbsp olives oil, devided into 2 parts (one part for the spinach filling and the other for the spicy sauce)
  • 100 gr mozarella cheese, shredded
  • 1 tbsp dried mixed herbs

For the canelloni spicy tomato sauce:

  • 4 medium (125 gr each) fresh tomato, peeled,  finely chopped
  • 100 gr cherry tomato, pureed
  • 1 tbsp chilli flake/ cabe kering bubuk kasar or 30 gr chopped freah chillies
  • 3 cloves garlic, finely chopped
  • 1 small onion, finely chopped
  • 100 ml dry white wine
  • salt n pepper to taste

Instruction:

How to Make Spicy Tomato Sauce:

  • Heat the olive oil, saute onion and garlic until soften an slighly browned
  • Add the chilli flake, cherry tomato puree and chopped  tomato, mixed italian herbsand  white wine, bring to boil
  • Simmer until the sauce is thicken n reduced

How to make Spinach and Feta Cheese Canelloni:

  • Heat 2 tbsp olive oil, saute onion until slightly browned
  • Add the spinach and saute until the spinach is soften, set aside
  • Drained the spinach by squeese the liquid out in fine cheese cloth
  • Finelly chopped the spinach and mix with crumbled feta cheese
  • Put into  plastic piping bag, tide the end thighly then cut the tips
  • Pipe the filling to the cannelloni pasta (if using lasagne, just put the filling in the one edge, then gently rolled)
  • Put the pasta in heatproof pirex casserole then put the spicy tomato sauce on top of it
  • Spread the mozarella on top of the pasta
  • Baked for about 20-30 minutes until the cheese melted and nicely goden brown.

Pad Thai or Phat Thai (Thai: ผัดไทย, RTGS: Phat Thai, ISO p̄hạdịthy, [pʰàt tʰāj], “fried Thai style” “Phở Xào in Vietnamese”) is a dish of stir-fried Pho noodles, a type of rice noodle, with eggs, fish sauce (Thai: น้ำปลา), tamarind juice, red chili pepper, plus any combination of bean sprouts, shrimp, chicken, hot dogs or tofu, garnished with crushed peanuts, coriander and lime, the juice of which can be added along with Thai condiments (crushed peanuts, garlic, tomato, chives, pickled turnip, coriander, lime, spicy chili oil, chili powder, vinegar, fish sauce, sugar). It is usually served with scallions and pieces of raw banana flower.

Recipe Pad Thai Shrimp Rice Noodle

Pad Thai is of Vietnamese origin,which uses Pho noodles (Bánh Phở in Vietnamese) and Chinese ingredients. In Vietnam, it is called Phở Xào or Banh Pho Xao Sate, meaning “stir fried Pho,” a popular street food, with sate (garlic, peanuts, and chiles), mung bean sprouts, meat of some sort, scallions, and fish sauce, often served with pickled vegetables. The dish was said to be imported to the ancient Thai capital city of Ayuthaya by Viet traders, and was then altered to reflect the Thai flavor profile and assigned a name reflecting its newly acquired Thai character. Pad Thai has since become one of Thailand’s national dishes.

Recipe Shrimp Pad Thai

Instead store bought or instant pad thai sauce, i made my homemade pad thai sauce. Pad Thai sauce is very easy to make, and this simple recipe will tell you how to do it. Pad Thai noodles are becoming very popular around the world, and can easily be made at home if you have the right ingredients. The key to good pad thai sauce is tamarind. Tamarind  or Asam Jawa is popular tropical fruit that comes in pods. The best way to buy tamarind is as a prepared paste (available by the jar or bottle at Asian or Indian food stores).

Ingredient :

  • 250 gr rice noodle, boiled with package instruction.
  • 500 gr(about 2) whole giant head prawn, peeled, keep the head and the shell for stock
  • 4 cloves garlic, finely chopped
  • 4 cloves shallot,
  • 2 tbsp oil
  • 1 tbsp dried shrimp,
  • 1 tbsp (shredded) preserved radish
  • 6 tbsp Pad Thai sauce, recipe follow
  • 1 large egg
  • 2 tbsp ground roasted peanuts, i use cashew nuts
  • 1/2 cup sliced garlic chives or green onion
  • 1 cups bean sprouts, rinsed,
  • 1 wedge lime

Homemade Pad Thai Sauce Recipe :

  • Prawn head and shell
  • 1/2 tbsp oil
  • 2  tbsp. tamarind paste , adjust to taste
  • 1 cup water
  • 3 tbsp. fish sauce
  • 2 tbsp. soy sauce
  • 1/2  tbsp cayenne pepper, adjust to taste
  • a pinch of grounded white pepper
  • 4 Tbsp. palm sugar

Instruction :

How to make homemade pad thai sauce recipe :

  • Heat up the oil, saute the prawn head and shell until crisp and nice golden brown.
  • Meanwhile, place the rest ingredients in a cup and stir to dissolve both tamarind paste and sugar.
  • Pour into shrim head and shell, bring to boil and simmer until thicken into half amount.
  • Sieve  with tea siever, set aside

How to make pad thai rice noodle :

  • Heat the oil in a wok. Add the garlic, shallot and stir-fry until golden brown. Add the shrimp and keep stirring until the shrimp changes color.
  • Remove the shrimp to prevent overcooking and set aside.
  • Add the noodles. They will stick together so stir fast and try to separate them. Add a little water, stirring a few times. Then add the Pad Thai sauce, and keep stirring until everything is thoroughly mixed.
  • Return the cooked shrimp to the wok.
  • Add the bean sprout, stir throughly
  • Push the contents of the wok up around the sides to make room to fry the eggs.
  • Add the eggs and spread the noodles over the eggs to cover.
  • When the eggs are cooked, stir the noodles until everything is well mixed-this should result in cooked bits of eggs
  • Remove from the pan and serve with chiles, peanuts, garlic chives and a few drops of lime juice. Mix well.

Ravioli are a traditional type of Italian filled pasta. They are composed of a filling sealed between two layers of thin egg pasta dough and are served either in broth or with a sauce. Today i make my basil green ravioli with roasted pumpkin filling. The contrast color between the dough and the filling is the trick for a beautifull ravioli dish. The finely chopped make the dough had a greeny radient color derived from a pureed basil leaves. Besides gives green color, the basil leaves that infused in the ravioli dough gives a pleasant scent and flavour.

Ingredient :

Recipe Fresh Ravioli Pasta :

  • 1 cups (125 g) all-purpose flour
  • 1/4 tsp. salt
  • 1 egg yolg
  • 2 tsp. olive oil
  • 10 ml water
  •  1 tbsp pureed basil oil
  • Extra flour on hand for dusting

Recipe Roasted Pumpkin Filling for Ravioli Pasta :

  • 200 roasted pumpkin ( sweet kabocha pumpkin)
  • 2 tsp finely chopped garlic
  • 1 tsp butter
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Recipe Cheesy Pasta Sauce :

  • 1 tbsp butter
  • 1 tsp olive oil
  • 1 cloves garlic, finely chopped
  • 1/4 onion, finely chopped
  • 1 tsp flour
  • 1 cup milk
  • 2 tbsp parmiggiano-reggiono cheese or grated ceddar cheese

Instruction :

How To Make the ravioli filling.

  • Mix all ingredients thoroughly until you have a smooth, paste-like consistency.

Make the ravioli pasta

  • Mix all the ingredients in large mixing bowl
  • Shape it into a ball, and place it on your work surface. Knead for at least 10 minutes or until it becomes elastic.

  • Roll the dough with rolling pin to flatten it, you can use pasta maker instead
  • Take the ravioli filling and place a tablespoon of it in middle of a dough.

  • Fill a small bowl with water, dip your fingers in, and moisten around the outer edge of the dough round.
  • Fold the dough in half over the filling, making a half-moon shape. Be sure all the filling stays inside. Pinch the edges together and then seal the edges of the ravioli with your finger punch. Make sure to press firmly and go all the way around. This will add a “homemade” touch as well.

  • Dust the finished ravioli with flour to keep them from sticking together.
  • Boil the ravioli pasta until your preference doneness, drain out and drizzle a little bit of olive oil
  • Voila, now your Homemade Ravioli is ready to go with your favourite sauce…

How to make Cheesy Pasta (Ravioli) Sauce :

  • Heat up the butter and olive oil,  add the garlic and onion until fragrant and not browned.
  • Add the bacon and the flour, saute until the flour throughly cooked.
  • Pour the milk and grated cheese, bring to boil with a very low flame until the cheese dissolved.
  • Add the black olives and turn off the heat and serve with ravioli pasta.

A marlin or sailfish, family Istiophoridae, is a fish with an elongated body, a spear-like snout or bill, and a long rigid dorsal fin, which extends forward to form a crest. Its common name is thought to derive from its resemblance to a sailor’s marlinspike. The Atlantic blue marlin (Makaira nigricans) is a species of marlin endemic to the Atlantic Ocean. The Atlantic blue marlin (hereafter, marlin) feeds on a wide variety of organisms near the surface. It uses its bill to stun, injure, or kill while knifing through a school of prey, then returns to eat. Marlin is a popular game fish. The relatively high fat content of its meat makes it commercially valuable in certain markets.

Marlin are rarely table fare, appearing mostly in fine restaurants. Most modern sport fishermen release marlin after unhooking. Luchy me i can bring this fish on my plate. I like fine dining style home cooking, plating and combining the side is one of my passion lately. I buy marlin fillet yesterday and simply seared it to perection. I add some thai style chili & lemongrass sauce to accompenied. The creamy and  fragrant sliced black garlic make the flavour rich even more. Ever since i’ve posted Super Food: Black Garlic (Fermented) & Pan Seared Scallop ala Dentist Chef, ilike to try out another menu that fit on exotic black garlic.

Ingredient :

Pan Seared Marlin Fish Steak:

  • 1 steak cut  marlin fish about 200 gr
  • 1 stp lenon juice
  • salt and black pepper to taste
  • 1 tsp EVOO

Black Garlic, Chili and Lemongrass Sauce :

  • 2 cloves black garlic,slice
  • 1/2 tsp chopped red chilli
  • 1 tbsp chopped lemongrass, soft white part only!
  • 1 1/2 tbsp EVOO
  • 1/4 cup white wine/ rice wine
  • salt, sugar and pepper to taste

Reduced Balsamic Vinegar:

  • 1/4 cup aged balsamic vinegar
  • 1/2 tbsp honey

Aglio Olio Spaghetti :

  • 100 gr  spaghetti, boil with pack instruction
  • 2 tsp chopped union
  • 2 tsp chopped garlic
  • 2 tsp chopped basil leaf
  • 2 tsp chopped red chilli
  • 4 tsp grape seed oil
  • 2 tsp chopped parsley
  • salt and pepper to taste

Side and garnish :

Instruction :

1. Make basamic vinegar reduction:

  • Mix balsamic vinegar and honey on a heavy bottom non stick  sauce pan, bring to boil, reduce with a very low heat untih thickeninto half, set aside

2. Make black garlic, chilli and lemongrass sauce :

  • Heat up the EVOO, saute black garlic, lemon grass and chilli until fragrant with low heat, don’t get browned!
  • Add the white wine/rice wine and seasoning, bring to boil.
  • Simmer with low heat until thicken, keep it warm untill served

3. Make aglio olio spaghetti :

  •  Heat the oil in a wok pan
  • Stir all the onion, garlic, and chilli untill nice brown colour
  • Add the pasta and stir fry for 3 minutes, add the seasoning
  • Turn off the heat and add the chopped parsley for the last touch.
  • Keep it warm untill served

Pan seared marlin steak:

  • Season the marlin fillet with salt and black pepper, drizzle with EVOO and lemon juice
  • Sear the marlin fillet on a skillet 2 minutes each side
  • Keep it warm until served

Put all element on the plate, and serve immediately!

Spaghetti al tonno piccanti is litterary means spaghetti or ather pasta with spicy tuna sauce. This classic italian sauce is made of tuna chunk, tomatoes (sun dried tomato prefferred), herbs and cayyenne pepper. Some pepole like to add cheese to make the sauce is rich even more. Since i had a fancy runny egg yolk on my toast before, i though that this tuna pasta  will be delicated with it.

Spaghetti with Spicy Tunaand Tomato  Sauce Recipe:

Ingredient :

  • 200 grams of spaghetti, cook as the package instruction
  • a small can of tuna in olive oil, daine and save the olive oil
  • 3 clove of garlic, finely chopped
  • 1/2 of a small onion, finely chopped
  • 1 tsp cayenne pepper or 1 tsp finely chopped deseeded chilli
  • 1/4 cup white wine
  • 1/2 can of diced plum tomatoes*use a whole can if you dont have sun dried tomatoes
  • 1/2 cup sun dried tomatoes
  • 1 egg yolk*use certified salmonella free egg since it serve partially cooked
  • a pinch of mix italian herbs

Instruction :

  1. Heat up olive oil in a wok pan, saute garlic and onion until slighly browned.
  2. Add tuna and stir another minute
  3. Add plum tomatoes, sun dried tomato, white wine, italian herbs and cayyenne pepper, bring to boil
  4. Simmer about 15 minutes, add the parmaggianno reggiano cheese and spaghetti, stir it evenly
  5. Meanwhile, seared the egg yolk in non-sticky pan about 30 second to make it not punctured above the sauce
  6. Serve the tuna pasta with egg yolk and parmaggiano reggiano cheese.

Vibrio vulnificus is the most deadly seafood-borne pathogen, with a higher case-to-death ratio than even Salmonella enterica.

Ingredient :

  • 125 gr pasta* i use rotini pasta, cooked as per packet instructions
  • 1 tin canned smoked oysters
  • 1 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 small bulbs  roasted garlic, mashed
  • 1 cups fresh baby spinach
  • 1/4 cup black olives, sliced
  • 1/3 cup white wine
  • salt and pepper
  • 2 tbsp chopped parsley
  • grated gouda cheese
  • 1 tbsp Black truffle oil

Instruction :

  1. Heat up butter and olive oil in a wok pan, add mashed roasted garlic, saute about 1 minute.
  2. Add smoked oyster, baby spinach, black olives and parsley.
  3. Deglaze the pan and let it bubble for one minute. Add pasta, salt and pepper to taste.
  4. Drizzle black truffle oil just nearly done.
  5. Serve with grated gouda cheese
