The Black Cod/Sable fish, Anoplopoma fimbria, is one of two members of the fish family Anoplopomatidae and the only species in the Anoplopoma genus. In English, common names for it include sable (USA), black cod (USA, UK, Canada), blue cod (UK), bluefish (UK), candlefish (UK), coal cod (UK), coalfish (Canada), beshow, skil(fish) (Canada) and Gindara (Japan, Indonesia) although many of these names also refer to other, unrelated, species.Of these, only “sablefish” and “black cod” are Acceptable Market Names in the U.S. The sable fish is found in muddy sea beds in the North Pacific at depths of 300 to 2,700 m (1000 to 9000 ft) and is commercially important to Japan.

Pan Fried Cod with Lemon Basil Pesto and Mashed Sweet Potato

The white flesh of the sablefish is soft-textured and mild flavored. It is considered a delicacy in many countries. When cooked its flaky texture is similar to Patagonian toothfish (Chilean sea bass). The meat has a high fat content and can be prepared in many ways including baking, broiling, grilling, smoking, frying or served as sushi.Sablefish are very high in long-chain omega 3 fatty acids, EPA and DHA. It contains approximately as much as wild salmon

Ingredient :

Pan Fried Black Cod/ Gindara Fish Recipe:

  • 2 Black Cod/Gindara steaks
  • 2 tbsp lemon juice
  • salt and pepper to taste
  • 1 tsp miso paste,*optional
  • 1 tbsp butter
  • 1 tbsp olive oil

Peanut Pesto Recipe :

  • 1/2 cup toasted peanut (you can use another nuts)
  • 1/2 cup basil leaves, i use thai basil, blanched
  • 1/4 cup parmiggianno-reggiano cheese
  • 3 roasted garlic or fresh garlic
  • 1/4 cup olive oil

  • 1/4 cup aged balsamic vinegar
  • 1/2 tbsp honey

Mashed Sweet Potato Recipe :

  • 1 large roasted sweet potato, keep it warm in a rice warmer
  • 2 tbsp heavy cream
  • 1 tbsp butter
  • salt and pepper to taste

Instruction :

How to make balsamic vinegar reduction :

  • Mix balsamic vinegar and honey on a heavy bottom non stick  sauce pan,
  • bring to boil, reduce with a very low heat until thicken into half amount, set aside

How to make peanut pesto sauce:

  • Combine the basil, garlic, and peanuts in a food processor and pulse until coarsely chopped.
  • Add the oil and process until fully incorporated and smooth.
  • Season with salt and pepper.
  • You can serve it immediately or heated first in heavy saucepan until nearly boiling

How to make mashed sweet potato:

  • Combine all ingredient in aglass bowl, mashed into snooth paste
  • Keep it warm untill serve

How to pan seared Black Cod/ Gindara Fish :

  • Season the fish steak with salt, pepper, miso paste and drizzle the lemon juice, set aside
  • Marinade about 30 minutes in the fridge. Drain before cooking
  • Heat up the oil and butter, Sear the fish about 2-3 minutes in all side
  • Drain from the oil, set aside and keep warm

A marlin or sailfish, family Istiophoridae, is a fish with an elongated body, a spear-like snout or bill, and a long rigid dorsal fin, which extends forward to form a crest. Its common name is thought to derive from its resemblance to a sailor’s marlinspike. The Atlantic blue marlin (Makaira nigricans) is a species of marlin endemic to the Atlantic Ocean. The Atlantic blue marlin (hereafter, marlin) feeds on a wide variety of organisms near the surface. It uses its bill to stun, injure, or kill while knifing through a school of prey, then returns to eat. Marlin is a popular game fish. The relatively high fat content of its meat makes it commercially valuable in certain markets.

Marlin are rarely table fare, appearing mostly in fine restaurants. Most modern sport fishermen release marlin after unhooking. Luchy me i can bring this fish on my plate. I like fine dining style home cooking, plating and combining the side is one of my passion lately. I buy marlin fillet yesterday and simply seared it to perection. I add some thai style chili & lemongrass sauce to accompenied. The creamy and  fragrant sliced black garlic make the flavour rich even more. Ever since i’ve posted Super Food: Black Garlic (Fermented) & Pan Seared Scallop ala Dentist Chef, ilike to try out another menu that fit on exotic black garlic.

Ingredient :

Pan Seared Marlin Fish Steak:

  • 1 steak cut  marlin fish about 200 gr
  • 1 stp lenon juice
  • salt and black pepper to taste
  • 1 tsp EVOO

Black Garlic, Chili and Lemongrass Sauce :

  • 2 cloves black garlic,slice
  • 1/2 tsp chopped red chilli
  • 1 tbsp chopped lemongrass, soft white part only!
  • 1 1/2 tbsp EVOO
  • 1/4 cup white wine/ rice wine
  • salt, sugar and pepper to taste

Reduced Balsamic Vinegar:

  • 1/4 cup aged balsamic vinegar
  • 1/2 tbsp honey

Aglio Olio Spaghetti :

  • 100 gr  spaghetti, boil with pack instruction
  • 2 tsp chopped union
  • 2 tsp chopped garlic
  • 2 tsp chopped basil leaf
  • 2 tsp chopped red chilli
  • 4 tsp grape seed oil
  • 2 tsp chopped parsley
  • salt and pepper to taste

Side and garnish :

Instruction :

1. Make basamic vinegar reduction:

  • Mix balsamic vinegar and honey on a heavy bottom non stick  sauce pan, bring to boil, reduce with a very low heat untih thickeninto half, set aside

2. Make black garlic, chilli and lemongrass sauce :

  • Heat up the EVOO, saute black garlic, lemon grass and chilli until fragrant with low heat, don’t get browned!
  • Add the white wine/rice wine and seasoning, bring to boil.
  • Simmer with low heat until thicken, keep it warm untill served

3. Make aglio olio spaghetti :

  •  Heat the oil in a wok pan
  • Stir all the onion, garlic, and chilli untill nice brown colour
  • Add the pasta and stir fry for 3 minutes, add the seasoning
  • Turn off the heat and add the chopped parsley for the last touch.
  • Keep it warm untill served

Pan seared marlin steak:

  • Season the marlin fillet with salt and black pepper, drizzle with EVOO and lemon juice
  • Sear the marlin fillet on a skillet 2 minutes each side
  • Keep it warm until served

Put all element on the plate, and serve immediately!

Sirloin Steak with Saffron Mashed Potato

I found this thin little piece of sliced sirloin steak in the meat stationary. The weight about 249 rgams and 1-1,5 inch thick. Sctually i like sirloin better than tenderloin since it had mush better fat content. Since that the tenderloin will dried out easily and cost you a lot than sirloin do. That’s why some fancy restaurant will serve tenderloin with some bacon wrapped the outer layer.

The sirloin steak is a steak cut from the rear back portion of the animal, continuing off the short loin from which T-bone, porterhouse, and are cut.club steaksThe sirloin is actually divided into several types of steak. The top sirloin is the most prized of these and is specifically marked for sale under that name. The bottom sirloin, which is less tender and much larger, is typically marked for sale simply as “sirloin steak.” The bottom sirloin in turn connects to the sirloin tip roast.

I serve the sirloin steak with saffron infused potato because i’m quite happy for this holiday. Last but not least, i need some fibers, vitamin and antioxidant to balanced my carcinogent doses from che charred carbon due to grilling meat. You know, mostly goddness in taste comes with bad impack to out health.

Ingredient :

Sirloin Steak Recipe:

  • 225 gr sirloin steak
  • salt and pepper to  taste
  • 1 tbsp barbeque sauce (plus 1 tbsp for serving)
  • a pinch of rosemarry
  • 1 tsp olive oil

Safron Infused Mashed Potato :

  • 1/2 cup warm mashed potato
  • a pinch of saffron
  • 2 tbsp heavy cream
  • 1 tbsp melted butter
  • salt and pepper to taste

Crispy Tempeh Salad:

  • 1 small tempeh, slice into jullienne, season witl salt and pepper, deep fried until golden browned, drained, set aside
  • 1/4 cup thinly sliced purple cabbage
  • 1/4 cup thinly sliced  daikon,
  • 1/4 cup thinly sliced carrot
  • 1 tsp lime juice/ balsamic vinegar
  • salt and sugar to taste
  • 1/2 tsp olive oil.

Sirloin Steak Recipe with Saffron Mashed Potato

My favourite part is the charred fat on the sirloin steak !

Instruction:

How To Make Crispy Tempeh Salad:

  1. Mix cabbage, daikon and carrot with lime juice, salt, sugar and olive oil, let it rest in the fridge about 5 minutes until the liquid comes out.
  2. Drain any liquid, add the crispy tempeh just before serving.

How To Make Saffron Infused Mashed Potato :

  1. Soaked saffron in the heavy cream until the colour tuned out yellow.
  2. Mix the saffron infused heavy cream, mashed potato and butter. Season with salt and pepper.
  3. keep it in rice warmer before serving

How To Make Barbeque Sirloin Steak:

  • Mix the meat witl all ingredient, marinate about 1 hour or overnight.

  • Grill untill your preference doness.

Cajun seasoning will fit wit any kind of seafood, poultry or even with gamey meat such a duck, venison or wild boar. I also using it to season potato, corn and cassava. You can baking, grilling, roasting, boiing and deep frying with it. I called it all purpose seasoning. I like to mixed cajun seasoning with oil before applied to marinade the meat.

TUNA STEAK :
1 tuna steak
1/2  tsp cajun seasoning
1 tbsp olive oil
1 tsp lime juice
CREAMY DILL SAUCE :
3 tbsp heavy cream
1 tsp flour
1/2 tbsp garlic
1/2 tsp dill
1 tbsp butter
Salt & Pepper to taste
1/3 cup water
CAJUN GRILLED VEGGIES:
baby carrot, blanchedbaby cornbroccoli
1/2 tsp cajun seasoning1 tsp olive oil

Instruction:

HOW TO GRILLED TUNA IN CAJUN STYLE :

  1. Mixed olive oil, cajun seasoning and lime juice, spread all over the tuna and marinade about 30 minutes.
  1. Grill each side about 2-3 minutes, don’t overcooked. I like it well done with slightly pinkish in the middle.

HOW TO MAKE CREAMY DILL SAUCE :

  1. Melt butter and add garlic, don’t make it browned
  2. Add flour, stir evenly
  3. Set the flame into the lowest, add heavy cream, dill, water and all seasoning.
  4. simmer until the sauce is thicken

HOW TO MAKE CAJUN STYLE GRILLED VEGGIES :

  1. Mixed olive oil and cajun seasoning  spread all over the vegies
  2. Grill each side about 1 minutes, don’t overcooked.

It’s a very pleasan and fragrance dish.  Garam masala (from Hindi: गरम मसाला, garam (“hot”) and masala (spices) is a blend of ground spices common in North Indian and other South Asian cuisines.[1] It is used alone or with other seasonings. The word garam refers to intensity of the spices rather than capsaicin content.

Since i had made my HOMEMADE GARAM MASALA, i’m gonna use that to seasoning my roasted ribs. I’m curious how the garam masala barely  taste  without any additional except salt to taste. Actually i’m quite surprice that my oven roasted ribs bring some delicacy lunch. I serve it with roasted garlic, seared oven baked potatoes and  sweet corn.

Garam Masala Roasted Beef Ribs

Slow Roasted Beef Ribs with Garam Masala Recipe :

Ingredient:

For Roasted Ribs :

  • about 1 kg premium ribs. mine was 1,2 kg
  • salt to taste
  • 1 tbsp Garam Masala
  • 1 tsp grape seed oil or any any high smoking temperature oil for searing the beef

Instruction:

  • Trim of any fat as possible from the beef ribs

  • Lay down the beef ribs, springkle with salt and garam masala

  • Stab it out with table fork to make sure that all seasoning penetrates the ribs evenly, best moment for me actually!

  • Cover and seal it with plasting wrap and marinade in the fridge overnight

  • Preheat oven at 160 Celcius
  • Heat up some high smoking temperature oil until smoking in your skillet, quickly seared both side and make sure all surface seared properly
  • Put the seared ribs in ovenproof plate, wrap it thighly with alumunium foil. I’m wrapped it out crossed over  twice

  • uncover, set the oven to 250 Celcius, let it roasted another 15 minutes
  • serve it immediately!, dont forget only to serve it hot

1 kg, 2 piece, young beef ribs
1 tbsp lime juice, 1 sdm air jeruk limau
4 garlic/bw putih, haluskan/mashed
5 cm ginger/jahe,haluskan/mashed
1 Lemongrass/Sereh, geprak/smashed
2 Kaffir lime leaves/Daun jeruk purut
2 cups Water/Air, for boiling

Resep Saus  Cabe Hijau (Green Chilli Sauce) :

7 Shallot/ Bawang merah
7 Garlic/ Bawang putih
50 gr green chillies/cabe hijau
7 green bird eye chillies,
3 cm ginger/ jahe,
1/2 tsp Pepper/Merica bubuk
Salt/ Garam, secukupnya
Sugar/ Gula pasir, secukupny

Instruction :

How to make Saus cabe Ijo :

  • Grind all ingredient into a rought paste
  • Heat 3 tbsp oil, saute 2-3 minutes until fragrance

Didihkan air, masukkan iga, sereh, daun jeruk purut, garan dan lada, didihkan dengan api kecil selama 1-1,5 jam

  • Drain the ribs well

Tiriskan iga sapi

  • Grill the ribs above charcoal until the surface form a little crisp layer, smear the green chilli sauce evenly, continue grilling until the sauce is dried

Bakar sampai setengah kering, olesi dengan saus cabe hijau dan bakar kembali diatas bara api sampai sedikit mengering

  • Serve with warm rice and the rest of green chilli sauce and Acar/ Indonesian pickle salad

Sajikan dengan nasi hangat dan sisa bumbu cabe hijau dan acar

Rica rica is basically made of chillies, garlic , shallot among with the other traditional ingredient. Rica itself literary “hot n spicy” or “Chilles”  in Bahasa Indonesia. Rica is suitable for cook poultry, beef, por or even any kind of seafood.

Chicken rica-rica is one of Manado (Indonesian Ethnic) traditional food. they usually add pandan leaves to the sauce, but i found that won’t perfect for any kind of beef cut.

Ingredient /Bahan Iga Bakar Rica-Rica :

700 g, young beef ribs,
1 tbsp lime juice, 1 sdm air jeruk limau
4 garlic/bw putih, haluskan/mashed
5 cm ginger/jahe,haluskan/mashed
1 Lemongrass/Sereh, geprak/smashed
2 Kaffir lime leaves/Daun jeruk purut
2 cups Water/Air, for boiling

Resep Saus  Rica-Rica  :

7 Shallot/ Bawang merah
7 Garlic/ Bawang putih
12 red chillies/cabe merah
7 red bird eye chillies,
3 cm ginger/ jahe,
1/2 tsp Pepper/Merica bubuk
Salt/ Garam, secukupnya

5 cm pandan leaves, tide up
Sugar/ Gula pasir, secukupnya

Instruction :

Rica Rica Sauce :

  • Grind all ingredient into a rought paste (except the pandan leaves)
  • Heat 3 tbsp oil, saute 2-3 minutes until fragrance
  • Add 1/2 cup water, let it boil and add the pandan leaves
  • Simmer about 10 minutes until the rica sauce is thick

Salah satu olahan tempe yang istimewa adalah steak tempe. Steak tempe ini sebenarnya campuran antara daging sapi has dalam yang dicincang dan dicampur dengan cincangan tempe yang terlebih dulu dikukus sampai matang kemudian di grill dan dilumuri dengan saus teriyaki.
Ceritanya kemarin aku diminta mama beli oven gas 8 loyang pesanan orang. memanfaatkan kesempatan, aku minta bonus dong sama si encik, jadilah aku punya pisau pencincang daging yang beratnya lumayan, mana bilahnya benar2 tajam lagi. Sebagai percobaan, aku kebetulan punya daging tenderloin di kulkas dan dalam waktu 5 menit jadilah daging has dalam cincang. Setelah jadi malah akunya bingung dan agak menyesal mencincang daging yang rada mahalan dikit…hahaha
Jadilah aku berniat membuat steak tempe. Adonannya aku bagi dua, satu aku jadikan steak, yang satu lagi aku isi tengahnya dengan keju mozarella dan rencananya mau bikin RESEP TEMPE CORDON BLEU ALA DENTIST CHEF.

Bahan Steak Tempe:
300 gr daging tenderloin premium, cincang halus
200 gr tempe, kukus, cincang halus
1 butir telur
2 sdm tepung roti
1 sdm krim kental
1 sdm tepung terigu
1/2 sdt lada hitam
1/2 sdt garam
1/4 sdt rosemarry
1/4 sdt thyme

Saus teriyaki:
1 sdm saus teriyaki instan
1 sdm mirin/ white wine
1/2 sdt kikkoman
1/4 sdt wijen putih, sangrai
1/4 sdt wijen hitam, sangrai

Cara Membuat Steak Tempe Saus Teriyaki:
# campur semua bahan steak tempe sampai rata
# bagi dua adonan, sisihkan satu adonan untuk membuat RESEP TEMPE CORDON BLEU ALA DENTIST CHEF
# panaskan grill pan, beri sedikit margarin, gril kedua sisi steak sampai kecoklatan, hati2 saat mengangkat dan membalik steak tempenya
# taruh steak tempe diatas pinggan tahan panas, lumuri dengan saus teriyaki, panggang dengan suhu 180 derajat selama 5 menit
# taruh diatas piring saji, lumuri dengan sisa saus teriyaki dan taburi wijen sangrai diatasnya.
# sajikan dengan kentang goreng dan sayuran yang telah diblansir

Panjang banget judulnya ya ???
Intinya steak ayam dengan saus holandaise dan disajikan dengan pasta angl hair yang dimasak kari ala thailand. Dada ayam tanpa tulang dimarinasi dengan bumbu kari dan herbs kemudian di grill sanpai matang dan disajikan dengan saus holandaise buatan sendiri.

Bahan :
1 buah dada ayam tanpa tulang
100 gr pasta angel hair pasta, rebus sesuai petunjuk kemasan

Bahan marinasi Chicen Steak :
1 sdt bubuk kari
1/2 sdt rosemarry
1/2 sdt thyme
1/2 sdt garam
1 sdt minyak zaitun

Bumbu Thai Curry Angel Hair Pasta:
50 gr kacang merah, rebus sampai empuk
30 gr celery stick
1 sdm Thai curry paste
50 ml krim/santan
2 siung bawang putih, cincang halus
1 sdm minyak zaitun
1/2 sdt abon cabe kering/ sambal cabe
1/2 sdt garam

Bahan Holandaise Sauce :
2 sdm butter
1 sdm margarin
2 buah kuning telur
1 sdt air lemon
Lada dan garam secukupnya

Cara Membuat Chicken Steak:
# rendam ayam dengan bahan marinasi selama 2 jam dalam kulkas
# grill sampai matang, jangan sering dibalak balik atau ditekan karena dagingnya bisa menjadi kering
# simpan sementara dengan dibungkus alumunium foil agar tetap panas

Cara membuat Thai Curri Angel Hair Pasta:
# panaskan minyak zaitun, tumis bawang putih sampai harum
# masukkan kacang merah, seledri, krim dan semua sisa bumbu
# aduk sampai mengental
# masukkan angel hair pasta, aduk sampai semua bahan tercampur rata

Cara membuat Holandaise Sauce:
# Masukkan semua bahan dalam blender
# blender sampai saus mengental

Penyelesaian:
# Taruh thai curry angel hair pasta dipiring saji
# Taruh steak ayam

Resep Steak Burung Merpati dengan Saus anggur dan salad segar

Since i have a whole giant baby pigeon, i wonder if i can make a delicacy dish with it. Thanks to the Zespri Kiwi Fruit official site that inspired me to make the kiwi sauce for pigeon breast steak. I add some strawberries and red wine to the sauce and drizzle it to the pan seares pigeon breast

Ingredient:

pigeon steak:
1 giant baby pigeon, deboned the breast
1/2 tsf thyme
1/2 tsf rosemarry
1 tsf worchestershire sauce
L&P sauce
2 tsp cream
Salt n pepper to taste

Wine Berries Sauce:
1/2 gold kiwi/ chinese ghooseberries
2 strawberries
30 gr chopped onion
1 clove garlic, chopped
50 ml red wine
Salt n pepper to taste

Fresh Garden Salad:
20 gr red cabbage, jullienned
20 gr japanese cucumber, jullienned
20 gr lettuce, sheddered
20 gr carrot, jullienned
1 tsf grape seed oil
1 tsf cider vinegar
1 tsf sugar
Salt n pepper to taste
20 gr daikon, jullienned

Mashed Potato:
1 large potato
20 ml cream
Salt n pepper to taste

INSTRUCTION

Pigeon steak:
# marinated the pigeon breast in the fridge for about 30 minutes
# grilled or pan seared for about 1 minute each side with high heat to lock the juice within till the surface is nice golden brown
# put it in preheated oven for 10 minutes and 180 C untill cooked through

Wine berries sauce:
# stirred all ingridients until all soften up, add the wine
# blender untill smooth consistency
# put the sauce in the saucepan, simmer until the sauce is thick, set aside

Mashed potato:
# combine all ingridients, set aside

Fresh Garden Salad:
# combine all ingridients, set aside

Finishing:

# Put the mashed patato in the serving plate
# Stacking with the fresh garden salad
# Put the pigeon breast in the top of the salad
# drizzle with the wine berries sauce
# serve immidiately

Waktu belanja di spm langganan kebetulan ada baby stingray fish atau ikan pari kecil. Agak ragu untuk membelinya soalnya gak tau cara mengolahnya, tp waktu tanya karyawannya, ternyata enaknya ukan pari ukuran kecil dijadikan steak atau dimasak penyet ala Surabaya. Buat coba2 aku beli satu yg beratnya sekitar 300 gr, bagian mata dan insangnya yang agak scarry aku minta dibuang dan lgs dibawa pulang deh…..
Bahan:
1 ekor ikan pari/ iwak pe kecil, lumuri dengan 1 sdm air lemon dan garam secukupnya
Saus barbeque:
1 buah bawang bombay kecil, cincang kasar
3 siung bawang putih, cincang kasar
1 cm jahe, cincang kasar
1 sdm kecap manis
1 sdt kecap asin
2 sdm pasta tomat
2 sdm saus sambal
1 sdt cabe giling
1 sdm minyak
1 sdm palm sugar
3 sdm saus tomat
1 sdt bubuk cabai
Cara membuat:
Saus Barbeque:
#panaskan minyak, tumis bawang bombay dan bawang putih sampai harum, masukkan semua bahan, matikan api, dinginkan dan blender sampai halus
# kembalikan ke wajan dan masak sampai mengental
Ikan Pari Bakar:
# tiriskan ikan pari, goreng dalam minyak panas yang banyak sampai setengah matang
# olesi dengan saus barbeque, grill sampai matang
# taruh diatas piring saji, sajikan dengan kentang goreng dan lumuran saus barbeque

Sekarang banyak banget resto yang spesialisasi menunya iga sapi, karena entah kenapa daging yang menempel di iga sapi itu sangat gurih dan mempunyai tekstur yang sangat chewy, apalagi pakai iga sapi impor yang lebih empuk……
Iga sapi penyet bakar adalah makanan khas Surabaya yang biasanya disajikan diatas cobek lengkap dengan sambal cobek terasi/petis dan lalapan. Makanan pendampingnya biasanya tahu goreng….

Bahan:
500 gr Iga sapi impor,
1 sdt garam
3 cm jahe, geprek
1,5 lt air
Bahan olesan:
1 sdm sambal terasi, 1 sdm saus barbeque, 1 sdt kecap inggris, aduk dan encerkan secukupnya dengan kaldu rebusan.
Sambal Petis
Bahan:
10 buah cabe merah
5 buah cabe rawit
2 buah tomat
3 siung bawang merah
1 siung bawang putih
1 sdt air asam jawa
1 sdt petis udang/ terasi jg boleh
1 sdm gula merah
1/2 sdt garam
Pelengkap:
Irisan timun, tomat dan tahu goreng
Cara Membuat:
# rebus iga dengan air, jahe dan garam sampai empuk
# rendam dengan bahan olesan selama 30 menit
# bakar atau grill sampai cukup terkaramelisasi, olesi dengan bahan olesan sesekali
Sambal Petis:
# goreng secara utuh semua bahan dengan 1 sdm minyak sampai matang, tiriskan
# ulek semua bahan sampai cukup halus
Penyelesaian:
# tata iga bakar, sambal penyet dan semua bahan pelengkap diatas cobek
# Sajikan segera

Waktu nonton tv, ada acara yang menayangkan tentang fine dining yang penataan masakannya harus tinggi dan artistik atau indah, Kebetukan di freezer ada stok burger sapi instan dan ada bayam merah juga, jd punya ide membuat steak yang disusun sandwich dengan mashed potato, ditengah2nya aku kasih bayam merah yang disautee dengan bawang putih


Bahan:

3buah burger sapi tebal(merk de GLOW), grill sebentar
Mashed Potato:
1 buah kentang, rebus sampai matang
50 ml krim kental
1 sdm minyak biji anggur
1/2 sdt garam
1/4 sdt lada putih
1 sdt parsley cincang
Tumisan bayam merah:
1 genggam bayam merah
1 siung bawang putih, cincang
1 sdm minyak biji anggur
Saus bayam merah:
1 sdm bayam merah cincang
1 sdt bawang putih cincang
50 ml kaldu sapi
1 sdt butter
1 sdt brown sugar
50 ml red wine (aku memakai anggur kolesom cap Orang Tua)
Cara membuat:
Mashed Potato :
# panaskan minyak, masukkan kentang halus
# masukkan krim kental, lada, garam, dan daun parsle, aduk sampai kental
Tumisan Bayam:
# panaskan minyak biji anggur, tumis bawang putih sampai kecoklatan
# masukkan bayam merah dan tumis sampai cukup layu, sisihkan
Saus Bayam merah:
# panaskan butter, masukkan bawang pitih, tumis sebentar
# masukan brown sugar, tumis sampai terkaramelisasi secukupnya
# masukkan red wine dan kalu sapi, garam dam lada
# masukkan bayam merah, tunggu sampai saus mengental, matikan api, sisihkan
Penyelesaian :
# Susun Burger sapi di piring saji, tumpuk dengan mashed potato dan tumisan bayam, tumpuk sekali lagi dan terakhir tumpuk burger sapi, beri sausnya dan taruh garnish bayam merah goreng
# Lumuri dengan sausnya
# Sajikan segera

Tuna Steak with Aglio Olio Farfalle and Guacamole Salad

I made the steak with sashimi grade tuna that marinade with fresh grounded black pepper. The colour of the tuna steak’s survace is white with spotted black n reddish in the middle , don’t get your throat choked because the shasimi grade is save to eaten raw. The farfalle or tie pasta was cooked with simple with aglio olio style. To make a refresh sensation, i add some fresh guacamole salad to complete the dish

A. Guacamole Salad :
1/2 medium ripe avocado, cut 1x1x1 cm, smash the half ammont
1 small red union, chopped
3 leafs mint, chopped
1/4 red bell pepper, chopped
2 red chilli, chopped
2 tsf grape seed oil
1 stf lemon juice
Salt and pepper to taste
# Toss all the ingrediens in a mixing bowl, set aside

B. Tuna steak:
225 gr sasimi grade tuna
# springkle with fresh ground black pepper and salt
# grill 1 minutes each side, set aside

C. Aglio olio Farfalle Pasta:
75 gr farfalle, boil with pack instruction
2 tsf chopped union
2 tsf chopped garlic
2 tsf chopped shallot
2 tsf chopped red chilli
4 tsf grape seed oil
2 tsp chopped parsley
1 tsf sea salt
1 tsf black pepper
# Heat the oil in a wok pan
# stir all the onion, garlic, shallot and chilli untill nice brown colour
# add the pasta and stir fry for 3 minutes, add the seasoning
# turn off the heat and add the chopped parsley for the last touch
Put the pasta, tuna steak and guacamole salad on the serving plate.
Voila…….

Pertama kali nyicipin lamb chop steak di “Angel Cafe”, Indralaya. Cafe ini lumayan unik krn menurutku pemiliknya cukup berani buat invest fine dinning cafe yang jauh dari pusat Kota Palembang. kfe ini terletak  sekitar 32 km dr pusat kota palembang, di dekat kampus Univesitas Sriwijaya yang notabene mahasiswanya mencari makanan murah…….
Tapi sutralah…….

 Seporsi Lamb Chop Steak di Resto ini dibanderol Rp.50 rb, dan menurutku harga segitu worthed n termasuk murah kalo dibandingin sama kualitas dan kuantitas steaknya. Apalagi yang masakin mantan Chef di Novotel Bali…..
Aku kepengen bikin lamb chop sendiri, tp bingung karena gak ada yang jual daging lamb chop, tp untungnya ternyata ada yang jual (br tau), di Lottemart Palembang ada daging lamb chop frozen yg sekilo harganya Rp.116 rb. Aku beli 2 potong yang sepotongnya sekitar 150 gr, lgs dibawa pulang dan siap dimasak……

Bahan :
2@150 gr Lamb Chop Impor
1/2 sdt rosemarry
1/2 sdt thyme
1/2 sdt dill
1/2 sdt parsley
1/2 sdt garam
1/2 sdt bubuk lada putih
2 sdm minyak biji anggur
Saus :
2 sdm bawang bombay cincang
1 sdm bawang putih cincang
1/2 sdt brown sugar
1/2 sdt garam
1 sdt tepung terigu
1/2 sdt kaldu bubuk
100 ml krim kental
Pelengkap: Kentang kecil rebus, kapri, wortel, jagung muda, tumis dengan 1 sdm margarin dan daun parsley

Cara membuat:


Campur rosemarry, thyme, parsley,daun dill dan garam, lada dan 1 sdm minyak biji anggur
Lumuri bahan tersebut ke daging lamb chop, marinasi selama 6-12 jam dlm kulkas
Bersihkan dr bahan perendan, keringkan
Panaskan 1 sdm minyak biji anggur di grill pan, grill lamb chop selama 3 menit tiap sisi sampai matang, sisihkan
Saus:
Panaskan minyak bekas memanggang daging td, tumis bawang bombay dan bawang putih sampai harum
Masukkan tepung terigu dan masak sampai terigu matang
Kecilkan api dan masukkan krim kental
Tambahkan semua sisa bumbu, matikan api dan dinginkan sebentar
Blender sampai halus
Kembalikan ke dalam wajan dan masak sampai mengental
Penyelesaian:
Susun bahan pelengkap dan daging lamb chopnya diatas piring saji atau hot plate
Siram dengan saus dan sajikam segera
