Toward the end of the Ming Dynasty and the early days of the Qing Dynasty (in the 17th century) there lived a beggar in Changshu, Jiangsu. One day, he stole a chicken. Without any seasoning with which to cook it, he wrapped the whole chicken with mud and began roasting it over a fire. When the mud dried, be cracked it open and the feathers came off of the chicken with the mud, revealing a strong aroma. Beside himself with happiness, the beggar gulped down the chicken. A scholar named Qian Qianyi, who wastaking a stroll, happened to pass by and was attracted by the aroma from the chicken. He sent his servant to ask for a piece of the meat. The scholar tried it and found the taste unusually good. Ayam pengemis dibuat dari bahan satu ekor ayam tanpa tulang yang direndam selama minimal 5 jam dalam bumbu kecap, arak masak, bunga lawang dan cengkeh. Kemudian diisi dengan tumisan jamur, udang, rebung, dan jahe, yang semuanya dimasukkan ke dalam perut ayam yang sudah direndam bumbu.

  • 1 kg clay / fluor dough

  • 3 red chillies
  • 6 cloves garlic
  • 2 cloves shallot
  • 3 cm ginger
  • 2 cm turmeric
  • 1 tbsp oyster sauce
  • 1 tbsp angciu/ rice wine
  • salt and pepper
  • blend all ingredient to a fine paste

  • 2 tablespoons oil
  • 1 scallion (green onion, spring onion), finely chopped
  • 3 colves garlic, finely chopped
  • 200 gr grounded chicken
  • 50 gr scalllop, soaked, finely chopped
  • 50 gr dried shrimp, soaked , finely chopped
  • 50 gr chinese mushroom, , soaked , finely chopped
  • 1 tablespoon angciu/ chinese rice wine
  • 1 tablespoon light soy sauce

  • 100 g napa cabbage (stalk part only), julienne
  • 50 gr sweet corn
  • 1 large piece of aluminum foil

Preparation:

  • Rub cleaned chicken with marinade, make sure all surface and cavity covered,  Set aside.

  • 1 tbsp unsalted butter
  • 1 tbsp olive oil

  • 200 gr cooked rice, room temperature
  • 1 can tuna in olive oil, drained, cubed
  • 2 sprigs curry leaves
  • 4 red Chillies
  • 6 shallot
  • 4 garlic
  • 3 cm turmeric
  • 1 cm ginger
  • a pinchc of garam masala or curry powder
  • salt and pepper to taste
  • a pinch of sugar

Condiment :

  • deep fried
  • salted dried fish
  • cabbage, sliced thinly
  • bean sprout
  • sambal ikan bilis
  • fish cracker

Instruction:

  1. Blend  chillies, shallot, garlic, turmeric and gingger into a smooth paste, set aside
  2. Heat up 2 tbsp oil in a wok pan, saute curry leaves until nice and crispy, draines the curry leaves, set aside
  3. Saute the green chillies paste until fragrance and add the salt and pepper.
  4. When the oil appear separated from the paste, add garam masala, tuna and rice
  5. Stir occasionalli until the paste seasoning is spread throughly.
  6. Keep stirring for about 7-10 minutes, add crispy curry leaves when the nasi goreng is  nearly done.
  7. Serve with condiment

I found this thin little piece of sliced sirloin steak in the meat stationary. The weight about 249 rgams and 1-1,5 inch thick. Sctually i like sirloin better than tenderloin since it had mush better fat content. Since that the tenderloin will dried out easily and cost you a lot than sirloin do. That’s why some fancy restaurant will serve tenderloin with some bacon wrapped the outer layer.

  • 225 gr sirloin steak
  • salt and pepper to  taste
  • 1 tbsp barbeque sauce (plus 1 tbsp for serving)
  • a pinch of rosemarry
  • 1 tsp olive oil

Safron Infused Mashed Potato :

  • 1/2 cup warm mashed potato
  • a pinch of saffron
  • 2 tbsp heavy cream
  • 1 tbsp melted butter
  • salt and pepper to taste

Crispy Tempeh Salad:

  • 1 small tempeh, slice into jullienne, season witl salt and pepper, deep fried until golden browned, drained, set aside
  • 1/4 cup thinly sliced purple cabbage
  • 1/4 cup thinly sliced  daikon,
  • 1/4 cup thinly sliced carrot
  • 1 tsp lime juice/ balsamic vinegar
  • salt and sugar to taste
  • 1/2 tsp olive oil.

  1. Mix cabbage, daikon and carrot with lime juice, salt, sugar and olive oil, let it rest in the fridge about 5 minutes until the liquid comes out.
  2. Drain any liquid, add the crispy tempeh just before serving.

How To Make Saffron Infused Mashed Potato :

  1. Soaked saffron in the heavy cream until the colour tuned out yellow.
  2. Mix the saffron infused heavy cream, mashed potato and butter. Season with salt and pepper.
  3. keep it in rice warmer before serving

How To Make Barbeque Sirloin Steak:

  • Mix the meat witl all ingredient, marinate about 1 hour or overnight.

1/2 cup coconut oil

salt n pepper to taste

1 banana leaf, cut 20 cm long, toasted on hot skillet until soften enough to rolled it out.

Filling:

  • 1o0 gr grounded chicken
  • 50 gr woodear mushroom, sliced thinly
  • 50 gr shiitake mushroom, sliced thinly
  • 1 tbsp finely chopped garlic
  • 1/2 tsp chopped red chilli
  • 1/2 tbsp finely chopped onion
  • 1 tbsp oyster sauce
  • 1 tsp mushroom soy sauce
  • 1 tsp chinese wine/ angciu
  • 1/2 tsp sesame oil
  • salt and pepper to taste

How To Make Steamed Glutinous/ Sticky Rice Roll with Chicken & Mushroom Filling Recipe:

  • Boil coconut milk and add salt & pepper, put the sticky rice in the boiling coconut milk and stirring constantly until all the liquid absorbed.
  • Put the rice in a bowl, set aside. Meanwhile mix all the  filling ingredient
  • Put the banana leaf in your work surface, applied sticky rice on banana leaf and fhe filling in the center

In English, kebab with no qualification generally refers more specifically to shish kebab (Turkish: “şiş kebap“) served on the skewer. In the Middle East, however, kebab refers to meat that is cooked over or next to flames; large or small cuts of meat, or even ground meat; it may be served on plates, in sandwiches, or in bowls. The traditional meat for kebab is lamb, but depending on local tastes and religious prohibitions, it may now be beef, goat, chicken or fish. Like other ethnic foods brought by travellers, the kebab has become part of everyday cuisine in many countries around the globe.

Chicken Kebab with Tomato Mint Salsa and Thai Dipping Sauce Recipe

I find that Middle East Chicken kebab with a touch of Indian Garam Masala is perfect with tomato and mint salsa derived from western kitchen. Accompenied of thai dipping sauce bring the dish hint into your taste buds even more.

Recipe Barbeque Chicken Kebab with Tomato Mint Salsa and Thai Dipping Sauce

Ingredient :

Chicken kebab :

  • 1 chicken breast fillet, cubed 2 cm
  • 1 tsp garam masala
  • 1 tsp salt
  • 1 tbsp olive oil

Tomato Mint Salsa :

  • 4 cerry tomatoes, sliced thinly
  • 1 tbsp chopped fesh mint leaves
  • 1 tbsp sliced shallot
  • 1/2 tbsp chopped bird eye chillies
  • 1 tsp lime juice or rice vinegar
  • 1 tsp olive oil
  • 1/4 tbsp salt

Thai dipping Sauce :

  • 1 tsp thai chilli paste or dried chiili flakes
  • 1/2 tsp thai fish sauce
  • 1 tbsp indonesian sweet soy sauce
  • 1 tsp tamarin juice from 1 tamarin fruit  dissolved with 2 tbsp hot water

How to make grilled chicken kebab:

  • Mixed chicken, garam masala, salt and olive oil, set aside and marinated about 1 hour.
  • Put the cubed chicken breast in bamboo or metal skewers.
  • Grilled until done within about 2 minutes each side, dipending on your cubed chicken breast thickness. make sure it’s well done to prevent salmonellosis

How to make Tomato Mint Salsa :

  • Mixed all ingredient in a glass bowl, squased a little bit with spoon to let the tomato, shallot and mint juices driven out.
  • Keep it refrigerates before serving.

How to make Thai Dipping Sauce :

  • Mixed all ingredient in a sauce pan, bring to boil.
  • Served in room temperature.

Tips:

  1. When you use bamboo skewer, soaked it first in water about 15 minutes to prevent it’s burned up when grilling.
  2. Keep the cooked chicken kebab on warmer or wrap in alumunium foil to keep it warm, you don’t wanna eat it cold.
  3. Add oil in the chicken mixture instead on the grilling pan or grilling net.
  4. Don’t flip the chicken kebab when it uncooked or evenly, it will stick on the grilling net. The cooked meat won’t stick on grilling net
