Brain Fritter Recipe. How to cook and eat animal brain ??? that’s the first thought when you saw this nsty bits of offal parts of the animal. Cow brain or beef brain is the best animal brain for my licking because it’s the mildest brain bits when cooked. Sheep brain or lamb brain and goat brain had a strong gamey flavours and aromas. That’s why you had to brined sheep or goat brain before cooking, even i’m doing this treatment too when i cook cow brain. Salt and herbs brine get rid the strong smells and the remining blood clot.
Animal brain is actually a popular as a food through out the world. There is tacos de sesos or brain tacos in Mexico, cervelle de veau in France and Gulai otak or cow’s brain curry and otak goreng or cow’s brain omelette in Indonesia. Gulai otak is popular Padangnese hot and spicy brain curry with thick coconut milk and sheddered daun mangkoan or (Polyscias scutellaria) to reduce the smelly odor. Otak goreng is popular in Surabaya. The chopped brain mixed with egg, deep fried until crispy thenserved with sambal petis or shrimp paste sweet chili sauce.
Brain fritter is considered as a things to eat before 30, i mean due to high content of omega 6 and DHA, i guess this is really good for young peole to enhance their inteligent. Brains is good for brains, this is really popular as babies food. Unfortunately, like other offal, brain is highly source of cholesterols, that;s why i don’t recommend this for elder people. But this cholesterol is really good for young adult, junvenile or early teenagers because cholesterol is needed for sexual maturity development.
Savory brain fritter best served with some tasty and refreshing dipping sauce. Hot and spicy would be the best. You can serve this brain fritter with Spicy Yoghurt Dipping Sauce, Tomato Mint Salsa and Thai Dipping Sauce or Black Garlic,Chilli & Lemongrass Sauce.
INGREDIENT:
Cow’s/ Sheep/Goat brain fritter recipe :
- 1 brain about 300 gr, *brined, steamed
- 1/2 cup broccoly,roughly chopped
- 1/2 cup carrot, peeled, jullienned
- 6 curry leaves. thinly sliced
- 6 shallots, thinly sliced
- 4 garlic,thinly sliced
- 2- 3 medium size egg
- 1 tbsp rice flour
- 1 tsp homemade garam masala
- 1 tbsp all purpose flour
- 2 tbsp heavy cream/ thick coconut milk
- salt and pepper to taste
- Olive oil for pan friying
INSTRUCTION:
- Mix all ingredient except the brain until well mixed.
- Add the brined brain, this is needed to prevent the brain mashed over
- Spray the olive oil in non stick pan
- Heat up the oil then pour 1 1/2 tbsp the brain fritter batter
- Let the fritter surface browned
- Flip it over and let it browned again
- Finished all the batter
*How to brined brain :
- Dissolved 2 tbsp sea salt 4 cups water, add your preference herbs
- Soak the brain in the salt brine for about 30 minutes
- You can see that the brine turn into pink as the remaining blood dissolved
- Gently wash the brain in running tab water, drain well
- Steam it for about 5 minutes and it’s ready to cook now!

We cook brains as well in the Philippines but it is mixed with other offal like heart, liver and porks ear. Grilled and served on hot plate. I wonder this would be yummy as well.
