I can’t help it, my Indonesian licking always need some chillies for almost every dish. I make some dry chili relish by sauteeing the chopped shallots and garlic until browned and caramelized first, then i add finely chopped fresh bird eye chilli and stirred it well until all ingredients soften a little bit. The final touch is  add some anise flavoured liquor, eversince it’s not easy to get here in Indonesia, i’m using some white wine instead and add freshly grated star anise into it.

I love grated parmigiano-reggiano for topping any crust because it’s melted easily and act as a bonding agen for the topping. The grated parmigino reggiano cheese allow the moisture evaporates from the topping once it broiled in the oven. Do not to eager to add too many parmigiano reggiano cheese to cover the breadcrumbs topping, unless the moisture is locked and the result is soggy and pale topping covered on cheese crust.

  1. Scallop, basil, cheese…my favourite foods! Sounds pesto-flavoured because of the basil, yummy. Lol, Dedy, you sound like you are trying to make this Rockellfeller scallop more famous than it already is! One day you should open a restaurant called Dentist Chef and I will come😀

  2. What a great dish and beautiful presentation Deddy. I’ve never had my scallops over cook but I like your ingenious method of searing the bad boys! Scallops are astronomically expensive here and have been for about 6 months, no idea why. I used to buy a flash frozen bag of large scallops (about 907 g) for around $18, now they are selling the same package for $28! That’s almost $3 per scallop! When they become more reasonable, I will try this clever twist on an old favourite.

  3. Oysters Rockefeller I’m familiar with but these scallops would make my husband fall in love with me again.

  4. How did you get the scallops in it’s shells? The scallops I see in the market are already shelled (perhaps they are previously frozen?). Fantastic rendition of the scallops Rockefeller, I bet it’s better than original…wait, this is original!

  5. Because I prefer my oysters raw, I can really jump on board with Scallops Rockefeller over oysters any day. Love seared scallops and what you have done here is simple amazing! These look fabulous!

  6. Dedy, I’m sure you know already from my posts that Zi love scallops and I’m always looking for new recipes.
No need to look any further- this one is superb!
