Tomahawk Steak (Bone-in Rib Eye) with Salsa Verse Recipe

Tomahawk Steak anybodies ??? This huge cut of beef may not sounds familiar for you! yes, me too! Tomahawk steak is actualy a bone-in rib steak with the entire rib bone intact. The long ribs bone is usually frenched (trimmed from meat and fat) for elegant presentation purpose.  Contrary to the regular tomahawk steak cut, i prefer to let the ribs bone meat still intact because it’s actually tasty part. The term of tomahawk steak simply because of its resemblance to a Tomahawk or large destroyer missile. Tomahawk steak weight usually depends on how big is the cow because the thickness  of the steak depends on wideness of the ribs bone. My unfrenched tomahawk steak weighted almost 2.2 pounds, this gigantic piece of steak could feed for 3-4 people.

Recipe Tomahawk (Bone-in Rib Eye) Steak with Italian Salsa Verde Sauce

Tomahawk steak are tasty and tender piece of steak because it’s mostly composed of the longissimus dorsi, complexus and spinalis muscles which a lazy musscle. Those musscles did not support much of the cow’s weight, nor did it had to work hard or exercise. Its marbling of fat makes this very good for slow roasting and it also goes well on a grill cooked to any degree. Since rainy days in Palembang lately, i choose to pan seared it and roasted in hight heat to cooked it into medium well done. Due to the large size and also the long rib bone of the tomahawk steak, i suggest to seared it in a flat cast iron pan, if you don’t have any of it, simply use your wok pan! but you should make sure all surface was perfectly seared before roasted if you don’t want to get a dried out steak. That’s why i seared the gigantic tomahawk steak partially in the edge side of the wokpan . After that, i roasted it in 200°C with  preheated oven for about 15-20 minutes.

Recipe Tomahawk Steak (Bone-in Rib Eye) with Salsa Verde

For serving the tomahawk steak, i choose salsa verde or Italian green sauce (Spanish called this salsa verde too!). Basically, salsa verde consist  parsley, lemon zest, vinegar, capers, garlic, onion,  and olive oil. Instead of using lemon zest, i use kaffir lime leaves for giving an asian flavour burst to the salsa verde sauce. Beside parsley, i add a little bit of cilantro or flat leaves parsley and lemon basil leaves or daun kemangi to make it fragrant and refreshing even more. I also mixed the salsa verde with rice for the carbs, my oldest sister said it’s a little bit weird for it’s oily texture, but i still preety like it though.

Giant Bone-in Ribeye Steak (Tomahawk Steak) with Salsa Verde

Roasted Tomahawk Steak (Bone-in Rib Eye) Recipe:

  • Tomahawk Steak (about 2 pounds)
  • 2 Tbsp olive oil
  • 1 Tbsp melted butter
  • 1 Tbsp coarsed seasalt
  • 2 Tbsp freshly grounded black peppercorn

How to Make Roasted Tomahawk Steak:

  • Preheat oven at 200°C with lower and upper fire
  • Rub all the tomahawk steak with salt and blackpeppercorn evenly  and make sure it coated evenly
  • Just before pan searing, pour the  olive oil and melted butter to the tomahawk steak
  • Heat up the cast iron pan and sear the steak all over  the surface until got a nice golden brown crusted surface
  • Drizzle 1 tbsp olive oil to the roasting pan, roast the steak for about 15-20 minutes, depends on your doness preference
  • Serve with salsa verde and Balsamic Reduction

Salsa Verde (Sauce) Recipe :

  • 1/2 cup parsley leaves
  • 1/2 cup cilantro or flat-leaf parsley leaves
  • 1/4 cup daun kemangi or lemon basil leaves
  • 1 clove garlic 
  • 2 teaspoons capers, drained
  • 1/2 cup extra-virgin olive oil
  • 1 tbsp lemon juice or 1/2 tbsp vinegar
  • a pinch of kaffir lime zest
  • sea salt

How to Make Salsa Verde (Sauce) Recipe :

  • Place all ingredients (except the olive oil and lemon juice) in a food processor
  • Process it until finely chopped
  • With the motor running, add oil and  lemon juice to salsa verde mixture.
  • Process until well combined. Season with sea salt and pepper.
  • Serve with Tomahawk Steak

Roasted Beef Ribs with Indian Garam Malasa Spice is a simple and earthy recipe. Garam masala spice bring a simple slow roasted beef ribs to the next level of taste. It’s a very pleasan and fragrance dish.  Garam masala (from Hindi: गरम मसाला, garam (“hot”) and masala (spices) is a blend of ground spices common in North Indian and other South Asian cuisines.[1] It is used alone or with other seasonings. The word garam refers to intensity of the spices rather than capsaicin content.

Varying combinations of these and other spices are used in different garam masala recipes in accordance to region and personal taste and none is considered more authentic than another.The components of the mix are toasted, then ground together.

Since i had made my HOMEMADE GARAM MASALA, i’m gonna use that to seasoning my roasted ribs. I’m curious how the garam masala barely  taste  without any additional except salt to taste. Actually i’m quite surprice that my oven roasted ribs bring some delicacy lunch. I serve it with roasted garlic, seared oven baked potatoes and  sweet corn.

Garam Masala Roasted Beef Ribs

Slow Roasted Beef Ribs with Garam Masala Recipe :

Ingredient:

For Roasted Ribs :

  • about 1 kg premium ribs. mine was 1,2 kg
  • salt to taste
  • 1 tbsp Garam Masala
  • 1 tsp grape seed oil or any any high smoking temperature oil for searing the beef

Instruction:

  • Trim of any fat as possible from the beef ribs

  • Lay down the beef ribs, springkle with salt and garam masala

  • Stab it out with table fork to make sure that all seasoning penetrates the ribs evenly, best moment for me actually!

  • Cover and seal it with plasting wrap and marinade in the fridge overnight

  • Preheat oven at 160 Celcius
  • Heat up some high smoking temperature oil until smoking in your skillet, quickly seared both side and make sure all surface seared properly
  • Put the seared ribs in ovenproof plate, wrap it thighly with alumunium foil. I’m wrapped it out crossed over  twice

  • put it in the oven about 2  or 2 1/2 hours
  • uncover, set the oven to 250 Celcius, let it roasted another 15 minutes
  • serve it immediately!, dont forget only to serve it hot

Green chilli pepper sauce with grilled beef short ribs is a popular Indonesian dish. Chili pepper also chile pepper or chilli pepper, from Nahuatl chīlli  is the fruit of plants from the genus Capsicum, members of the nightshade family, Solanaceae. The term in British English and in Australia, New Zealand, India, Malaysia and other Asian countries is just chilli without pepper. The GREEN CHILLI is the chilli pepper that harvested when the fruit is unripe and it gives a special hint compares the ripe ones.

The substances that give chili peppers their intensity when ingested or applied topically are capsaicin (8-methyl-N-vanillyl-6-nonenamide) and several related chemicals, collectively called capsaicinoids.Capsaicin is the primary ingredient in the pepper spray used as an irritant weapon. When consumed, capsaicinoids bind with pain receptors in the mouth and throat that are responsible for sensing heat. Once activated by the capsaicinoids, these receptors send a message to the brain that the person has consumed something hot. The brain responds to the burning sensation by raising the heart rate, increasing perspiration and release of endorphins. .e “heat” of chili peppers was historically measured in Scoville heat units (SHU), which is the amount of chili extract added to sugar syrup before its heat becomes detectable to a panel of tasters. Bell peppers rank at 0 SHU, New Mexico green chilis at about 1,500 SHU, jalapeños at 2,500–5,000 SHU, and habaneros at 300,000 SHU.

1 tbsp lime juice, 1 sdm air jeruk limau
4 garlic/bw putih, haluskan/mashed
5 cm ginger/jahe,haluskan/mashed
1 Lemongrass/Sereh, geprak/smashed
2 Kaffir lime leaves/Daun jeruk purut
2 cups Water/Air, for boiling

Resep Saus  Cabe Hijau (Green Chilli Sauce) :

7 Shallot/ Bawang merah
7 Garlic/ Bawang putih
50 gr green chillies/cabe hijau
7 green bird eye chillies,
3 cm ginger/ jahe,
1/2 tsp Pepper/Merica bubuk
Salt/ Garam, secukupnya
Sugar/ Gula pasir, secukupny

Instruction :

How to make Saus cabe Ijo :

  • Grind all ingredient into a rought paste
  • Heat 3 tbsp oil, saute 2-3 minutes until fragrance
  • Add 1/2 cup water, let it boil
  • Simmer about 10 minutes until the rica sauce is thick

How to make Grilled  Ribs :

  • Drizzle the ribs with lime juice, garlic and ginger. Marinade adout 30 minutes,

Lumuri daging kambing dengan air jeruk, diamkan minimal 30 menit.

  • Boil 2 cups water, put the ribs, lemongrass, kaffir lime leaves, sa;t n pepper and  let it boil in lowest flame about 1-1.5 hours

Didihkan air, masukkan iga, sereh, daun jeruk purut, garan dan lada, didihkan dengan api kecil selama 1-1,5 jam

  • Drain the ribs well

Tiriskan iga sapi

  • Grill the ribs above charcoal until the surface form a little crisp layer, smear the green chilli sauce evenly, continue grilling until the sauce is dried

Bakar sampai setengah kering, olesi dengan saus cabe hijau dan bakar kembali diatas bara api sampai sedikit mengering

  • Serve with warm rice and the rest of green chilli sauce and Acar/ Indonesian pickle salad

Sajikan dengan nasi hangat dan sisa bumbu cabe hijau dan acar

Rica rica is basically made of chillies, garlic , shallot among with the other traditional ingredient. Rica itself literary “hot n spicy” or “Chilles”  in Bahasa Indonesia. Rica is suitable for cook poultry, beef, por or even any kind of seafood.

Chicken rica-rica is one of Manado (Indonesian Ethnic) traditional food. they usually add pandan leaves to the sauce, but i found that won’t perfect for any kind of beef cut.

Ingredient /Bahan Iga Bakar Rica-Rica :

700 g, young beef ribs,
1 tbsp lime juice, 1 sdm air jeruk limau
4 garlic/bw putih, haluskan/mashed
5 cm ginger/jahe,haluskan/mashed
1 Lemongrass/Sereh, geprak/smashed
2 Kaffir lime leaves/Daun jeruk purut
2 cups Water/Air, for boiling

Resep Saus  Rica-Rica  :

7 Shallot/ Bawang merah
7 Garlic/ Bawang putih
12 red chillies/cabe merah
7 red bird eye chillies,
3 cm ginger/ jahe,
1/2 tsp Pepper/Merica bubuk
Salt/ Garam, secukupnya

5 cm pandan leaves, tide up
Sugar/ Gula pasir, secukupnya

Instruction :

Rica Rica Sauce :

  • Grind all ingredient into a rought paste (except the pandan leaves)
  • Heat 3 tbsp oil, saute 2-3 minutes until fragrance
  • Add 1/2 cup water, let it boil and add the pandan leaves
  • Simmer about 10 minutes until the rica sauce is thick
