Pasta, Spinach and Duck Prosciutto Salad with Sumac Salad Dressing ala Dentisi Chef

Sumac, sumak or sumach  is  flowering plants in the genus Rhus  from family Anacardiaceae. Sumac grow in subtropical climates, especially in Africa. The sumac fruits (drupes) are grounded into a reddish purple powder used as a spice in Middle Eastern cuisine to add a lemony taste to salads or meat. In Arabian cuisine, it is used as a garnish for  hummus and added to rice or kebab.

I’ve been searching sumac all over around and end up with nothing but dissapointing. My Arab descent friend  did’t known about it, even few of  arabian ethic stores in Palembang didn’t notes that. Thanks God one of my fellow blogger friends, Tinsyam  had sumac. She sent me a couple tablespoons of sumac and i can even wait to give it a try for my salad. My first verdict of sumac is lemony and tangy  sour aftertaste, i guess sumac is not only suits for salad but also great with seafood. My next project is making sumac crusted tuna.

Spinch Sumac Salad Just Before Tossed Out

Today i make a sumac salad with a fusion of eastern and western ingredient. I use HOMEMADE DUCK PROSCIUTTO, back olives, cheese and truffle oil for western touch. To give a contrast, i used few asian ingredient like lotus root and CRISPY ENOKI MUSHROOM TEMPURA and blended it with Middle East spice Sumac. For a presentation purpose, i mix the sumac sala dressing  after i did the photo session, but i still drizzled  it with black truffle oil.

Pasta, Spinach and Duck Prosciutto Recipe:

  • 1 cup cooked pasta(fusili)
  • 1 cup red spinach/amaranth leaves
  • homemade duck prosciutto
  • tomato, thinly sliced
  • bell pepper, thinly sliced
  • crispy enoki mushrooms tempura
  • carrot
  • raw peruvian sweet potato
  • black olives (kalamata)
  • garlic peanut
  • shaved cheese
  • lotus root, peeled and thinly sliced

Sumac Salad Dressing Recipe:

  • 1/2 tsp sumac
  • black truffle olive oli
  • 1/2 tsp lemon juice
  • a pinch od salt and pepper to taste


How to Make Spinach and Pasta Salad with Sumac Dressing:

  • Mix all sumac salad dressing ingredient, set aside
  • Toss all ingregient and adjust the taste

Greek salad (Greek: χωριάτικη σαλάτα [xorˈjatiki saˈlata] “rustic salad” or θερινή σαλάτα [θeriˈni saˈlata] “summer salad”) is a salad in Greek cuisine. Greek salad is made with pieces of tomatoes, sliced cucumbers, onion, feta cheese, and olives (usually Kalamata olives, other types of olives may be used as well), typically seasoned with salt and oregano, and dressed with olive oil. Common additions include the pickled leaves, buds or berries of capers (especially in the Dodecanese islands).Rather than simple olive oil and vinegar, as in a normal Greek lettuce salad, prepared dressings containing various herbs and seasonings are frequently employed. But actually i ain’t make a salad without vinegar…..

Greek Salad (Cucumber, Tomato, Olive and Feta Cheese) Recipe

Making homemade greek salad is quite easy and not require any effort instead of slicing the veggies. I used to sliced my cucumber until pepper thin with my chef series potato peeler, but you can use mandoline instead. If you using potato peeler, make sure you use the sharp omes and shaved the cucumber in one shoots and without hesitate, just drag it rigt away one time and you will got your paper thin shaved cucumber.

Greek Salad Recipe:


  • 1 cucumber, washed and cleaned, shaved with a peeler.
  • 100 gr feta cheese/ goat cheese, soak in milk first if to decrease the saltiness (i use YUMMY FETAH CHEESE)
  • 1 cup ripe tomato, cut into thin slice
  • 1o  green olives
  • 1 small onion, cut int thin ring

Salad Dressing:

  • 3 tbsp olive oil
  • 1/4 tsp oregano
  • 1/2 tsp pickled green peppercorn, roughly chopped
  • salt and peper to taste
  • a little drizzle of vinegar


  • Mix all greek salad dressing in a glass bowl, set aside ande refrigerate.
  • Mix all salad ingredient and toss evenly with the salad dressing.

Feta Cheese(Greek: φέτα, féta, “slice”) is a brined curd cheese traditionally made in Greece. Feta is a crumbly aged cheese, commonly produced in blocks, and has a slightly grainy texture. It is used as a table cheese, as well as in salads (e.g. the Greek salad), pastries and in baking, notably in the popular phyllo-based dishes spanakopita (“spinach pie”) and tyropita (“cheese pie”), or served with some olive oil or olives and sprinkled with aromatic herbs such as oregano. I just planned to make greek salad actually, but i run out cucumber and oregano. Since i never give up on trying a new  fusion dish, i just collect any greens ingredient in my fridge and voila, anything set into a large batch of salad. Since it salad, the Spicy Seasoned Cassava/ Yuca Root that i’ve made before is not being deep fried but oven roasted with olive oil sprayed over it.

  • 1 riped avocado, wedged cut
  • 100 gr feta cheese/ goat cheese, soak in milk first if to decrease the over saltiness (i use YUMMY FETAH CHEESE)
  • 1/2 cup Spicy Seasoned Cassava/ Yuca Root
  • 1/4 daikon radish, thinly sliced
  • 1/2 cup radish sprout
  • 1/2 cup green olives
  • 1/4 cup cherry tomato, cut in quarter
  • 1/s cup sheddered lettuce green
  • 1 carrot, grated into long noodle shape

Salad Dressing:

  • 1/4 cup balsamic vinegar
  • 1/2 tsp honey
  • 1/2 tsp mustard powder
  • salt and peper to taste
  • 2 tbsp truffle oil


  • Mix all dressing ingredient in a glass bowl, refrigerate
  • Mix and toss al inredient and serve chilled
