Resep Ikan Baronang Bakar Rica-Rica

Sambal Dabu-Dabu is traditional hot, sour and spicy salsa from Manado, Indonesia. Sambal dabu-dabu is similiar to Mexican salsa for tacos. It’s consists  chopped tomatoes, freshly squeese calamansi limes or known as lemon cui or jeruk kesturi/kunci, shallots, chopped bird’s eye chili, lemon basil leaves, vegetable oil or coconut oil, and salt.  Sambal Dabu-Dabu is related to Sambal Matah from Bali which consist of finely sliced shallots, chopped bird’s eye chili, terasi or shrimp paste, with a dash of kaffir  lime juice. Both Sambal Dabu-Dabu and Sambal Matah is suits for any seafood, especialy barrbequed dish.

For the grilling or  barbequing seasoning, i use Sambal Rica-Rica. Another spicy and hot sambal from Manado, it uses ginger, chili, lemon and spices. Suitable for barbecue meats and seafoods. I’ve posted Grilled Beef Ribs with Indonesian Spicy Rica-Rica Sauce or  Resep Iga Sapi Bakar Bumbu Rica-Rica. For todays lunch, i use ikan baronang or rabbit fish, species from family Siganidae.  Common baronang in Indonesia is Baronang Susu (Siganus canaliculatus). This fish ir rather seasonal fish with a white, sweet and succulent meat. Ikan baronang is usually grilled, deep fried or even pepes (steamed with banana leaves wrap).

Since i’m starving and literrary can wait longer to cooked through the fish with grilling, i deep fried the fish first to cheated the cooking duration. Well, some of the restaurant did this too. The fish is usually seasoned, deep fried until half done than grilled with  some seasoning applied. The fish is grilled just to infused the smokey aromas and this can get rid  the fishy smells.

Ingredient:

Grilled rabbit fish (ikan baronang bakar) recipe:

  • 1 (600 gr) ikan baronang or rabbit fish, cleaned
  • 2 tbsp lemon juice
  • 3 cloves garlic, mashed
  • 3 cm ginger, grated, juiced
  • salt and peper to taste
  • 3 tbsp SAMBAL RICA-RICA
  • oil for deep friying
  • SAMBAL DABU-DABU

Instruction:

How to make grilled rabbit fish :

  • Marinade the rabbit fish with garlic, ginger juice, lemon juice and salt, let it refrigerate for 30 minutes
  • Meanwhile, set your barbeque charcoal
  • Deep fried the rabbit fish until half done#optional
  • Spread SAMBAL RICA-RICA all over the rabbit fish
  • Grill until the fish is cooked through
  • Served with SAMBAL DABU-DABU

Sambal Dabi-Dabu Khas Menado

Sambal dabu-dabu is traditional hot, sour and spicy salsa from Manado, Indonesia. Sambal is a hot  chili-based sauce. Sambals are popular in Southeast Asia.  Typically made from a variety of chili peppers, it is sometimes a substitute for fresh chilis and can be extremely spicy for the uninitiated. Sambal dabu-dabu is similiar to Mexican salsa for tacos. Its  consists  chopped tomatoes, freshly squeese calamansi limes or known as lemon cui or jeruk kesturi/kunci, shallots, chopped bird’s eye chili, lemon basil leaves, vegetable oil or coconut oil, and salt. Sambal dabu-dabu along with ikan asin goreng ( crispy deep fried salted fish) is a common condiment with Tinutuan or Bubur Manado (Menadonese Vegetables Porridge)

Sambal Dabu-Dabu Over Grilled Fish

Sambal rica-rica is related to SAMBAL MATAH from Bali which consist of finely sliced shallots, chopped bird’s eye chili, terasi or shrimp paste, with a dash of kaffir  lime juice.  Both Sambal Dabu-Dabu  and Sambal Matah is suits for any seafood, especially barbequed dish.Besede both raw sambal, i used to served any seafood with SAMBAL RAWIT or bird’s eye chillies sambal. Another Manadonese popular sambal is SAMBAL RICA_RICA. Resep Sambal Dabu-Dabu Khas Manado (Manadonese Raw Chilli Salsa recipe)

Ingredient:

Sambal dabu-dabu recipe:

  • 6 red bird’s eye chillies, thinly sliced
  • 6 green bird’s eye chillies, thinly sliced
  • 8 shallots, thinly sliced
  • 2 riped tomatoes, deseeded, diced
  • 6 jeruk kunci/lemon cui or kalamansi lime, squeezed
  • 2 tablespoon coconut  oil
  • 2 tbsp chopped daun kemangi or lemon basil leaves
  • salt and pepper to taste

Instruction:

How to make sambal dabu-dabu:

  • Mix all ingredient in a glass bowl, set aside and refrigerated

Resep Gulai / Kari Telur Ikan Kakap a.k.a Snapper’s Fish Eggs Curry

Tadi ngeliat ada telur ikan yang lumayan besar di supermarket langganan, bentuknya lonjong, warnanya kuning2 pink dan udah rapi di wrapping, mentahnya aja dah kliatan enak, trus waktu diangkat, gak kcium aroma anyir, ya langsung kuangkat
Total kerusakan Rp. 24rb buat 400 gr telur ikan kakap……


Bahan :
402,07 gr telur ikan kakap ( kurang enak kalo kurang atau lebih dr berat itu, hahahaha), lumuri sedikit jeruk nipis dan belah dua sce perlahan biar bumbu meresap
100 ml santan kental
10 buah cabe merah, 5 buah dibelah dua
5 buah cabe hijau, belah dua
4 siung bawang putih
8 siung bawang merah
1 buah tomat, potong2
1 batang kecombrang, ambil putihnya, potong2
1/4 bawang bombay, potongt
3 cm jahe
1 sdt ketumbar
1 sdm minyak sayur
Cara membuat:
Belender 5 buah cabe merah, bawang putih, bawang merah dan jahe
Panaskan minyak, tumis bumbu sampai matang, tambahkan bahan2 lain dan aduk sampai matang dan mengental
Sajikan dengan nasi hangat, pasti bakalan nambah dan nambah lagi
# tips: beli telur ikan DALAM KEADAAN SEGAR, klo anyir jangan dibeli, soalnya pasti kalo susah matang rasanya gak enak walau bau anyirnya bisa hilang

gmn klo dibikin saus mentega? pasti enak, soalnya kepala salmon banyak mengandung lemak dan kartilago/ tulang rawan, biar asemnya nendang, aku tambahin tomat cherry yang agak  banyak

bahan:

kepala salmon ukuran sedang, sekitar 400 gr, belah dua,

1 buah jeruk lemon, ambil airnya

1 sdm margarin

3 sdm saus inggris merk  french

2 buah cabe merah beat, potong serong

2 sdt premium dark soysauce

i sdm minyak biji anggur untuk menumis

sebongkah kecil gula merah

3 batang daun bawang, potong memanjang

1/2 bawang bombay kecil, iris memanjang

3 buah bawang putih, cincang

10 buah tomat cherry, belah dua

air secukupnya

cara membuat:

#lumuri kepala salmon dengan air lemon dan marinasi dengan 1 sdt premium dark soysauce Lee Kum kee, goreng setengah kering

#panaskan wajan, tumis bawang putih, setelah harum masukkan bawang bombay dan cabe merah, tumis sebentar

#setelah harum, masukkan semua sisa bahan dan kecilkan api, aduk sampai mengental, tambahkan air dan masukkan kepala salmon dan tunggu sampai air habis

ikan siluang salai/ sale asam pedas manis a.k.a sweet sour spicy smoked fish

menu ini adalah favouriteku waktu masih tinggal di muaradua,OKU selatan, Sumsel. Nelayan sungai stempat biasa mengawetkan ikan siluang dengan cara diasap.  ikan siluang adalah sejenis karper yang biasa di sungai tersebut, ukurannya kecil, paling besar 10 cm, rasanya sangat gurih dan enak, biasanya digoreng kering dan dimakan dengan sambal. Biasanya mamaku memasaknya dengan cara disambal, digulai ataupun dicampur kedalam sayur daun ubi.

Kemaren iseng-iseng belanja di lottemart palembang, eh nostalgia ketemu ikan siluang ini, jd kesampaian nostalgia dgn kampung halaman. walau sdikit agak mahal dibandingkan harga mentahnya, sekitar 95 rb per kg, padahal waktu mentah harganya gak sampai 10 ribu perkilo,tapi wajarlah, krn proses pengasapan mengurangi berat ikan scara drastis……

bahan :

300 gr ikan siluang salai, goreng dengan minyak banyak sampai renyah

5 buah cabe hijau

5 buah cabe merah

5 siung bawang merah

3 siung bawang putih

2 cm jahe

1 buah tomat

gula merah secukupnya

saus tiram secukupnya

balsamic vinegar secukupnya, bs diganti air lemon

cara membuat:
blender setengah kasar semua bumbu, tumis sampai harum, masukkan saus tiram, balsamic vinegar, gula mearah, tambahkan sedikit air, keciklan api dan tunggu sampai lgket dan kental, matikan api, tnggu sebentar dan  masukkan ikan siluang salai yang sudah digoreng
